Chole Masala

Chole is one of favorite dish is in my is very delicious and healthy North Indian goes well with puri,bhatura and rice.
  • Chole(garbanzo beans)-2cups
  • Onion-1(finely chopped)
  • Ginger garlic paste-2tsp
  • Tomato puree-2
  •  Bay leaf-2
  • Black cardamom-1
  • Clove-4
  • Cinnamon stick-1’’
  • Turmeric powder-1/2tsp
  • Red Chilli powder-1tsp
  • Green cardamom powder-1/4tsp
  • Chole masala-2tsp
  • Chaat masala-1/2tsp
  • Oil-1tbsp
  • Salt to taste
  • coriander leaves for garnishing
 Soak chole for overnight with sufficient water.
 Pressure cook with  3cups of water,salt and pinch of turmeric powder 

 until it's soft, It should be soft and not overcooked.
 Heat oil in a heavy bottomed pan add bay leaf, cardamom, clove sauté for few seconds.
 Add chopped onion fry for 3 to 4 minutes; add ginger garlic paste sauté till transparent.
 Add tomato puree cook until oil separates. Add all dry masala red Chilli powder, coriander powder
 Turmeric Chole masala,chaat masala mix it properly.
 Add boiled chole and water mix it altogether well.
 simmer for 8 to 10 minutes. now add cardamom powder mix it properly.
 cardamom powder enhance the taste and gives more flavor. 
 cook for another 2 to 3 minutes.
 turn off the heat and garnish with coriander leaves.
