Dates and Dry fruits Ladoo

Today I am going to share last recipe of this year . I want to wish you all a very happy new year with this healthy Ladoo.
I think this is the only sweet there is no added sugar.so try out this healthy and guilt free sweet and perfect for this winter season.


Ingredients:
  • Dates(खजूर) - 18 to 20 ( pitted and finally chopped)
  • Poppy seed(खसखस) -  2 tsp                      
  • Almonds-  1/2 cup(finely chopped)
  • Walnut  -1/4 cup(finely chopped)
  • Cashew- 1/4 cup(finely chopped)
  • Makhana( lotus seed)-2 tbsp
  • Ghee- 1 tbsp






Method:
Dry roast makhana,let them cool and chopped into small pieces.
Heat ghee in a pan add poppy seed and fry for seconds
Then add chopped almonds,cashew and walnuts fry for 2 to 3 minutes .
Add chopped dates,makhana and mix well everything.turn off the heat.
Grease palm with some ghee.make small size round Ladoo.
Store in an airtight container.
Enjoy!!!!

Palak kofte in Microwave/Spinach kofte

Nowadays everyone is becoming health conscious and everyone wants to have healthy and nutritious food but sometimes due to health we have to compromise with taste.but i found this tasty kofte recipe from Nishamadhulika. this process brings out very tasty kofte with very less oil. here i have prepared
kofte in microwave and gravy on stove.it is very quick and tasty dish it tastes good with plain rice and chapati.

 
Ingredients:
  • For kofte-
  • Spinach-2cup(finely chopped)
  • Besan(gram flour)-1cup
  • Ginger-1tsp(grated)
  • Salt to taste
For gravy-
  • Onion- 1 (finely chopped)                             
  • Tomato-2(roughly chopped)
  • Peanut- 2 tbsp
  • Ginger garlic paste-1 tbsp
  • Turmeric powder-1/2 tsp
  • Coriander powder-1/4tsp
  • Cumin seed-1/2 tsp
  • Green chili- 2
  • Red chili- 1/2 tsp
  • Garam masala- 1/4 tsp
  • Oil- 1 tbsp
  • Salt to taste





Method:
Take besan,salt,ginger in a mixing bowl make a thick batter.
Now add chopped spinach mix well,without any lumps.
Make small size round balls.
Place on microwave safe greased plate.Microwave for 4 minutes.
Grind tomato, peanut and green chili together to make fine paste.
Heat oil in a pan add cumin seed when they crackle add chopped
Onion fry till golden brown. Add ginger garlic paste fry till raw smell goes off.
Add tomato and peanut paste fry till, oil separate from sides.
Add turmeric powder, salt, coriander powder,and garam masala fry for few seconds.
Add 1 and 1/2 cup of water, simmer for 3 to 4 minutes.
Add kofte and simmer for another 4 to 5 minutes.
Note:
Time varies from microwave to microwave.

Oats and Peanut cookies(Eggless)

 A combination of oats,peanut and coconut makes this cookie is very nutritious and delicious.


Ingredients:
  • All purpose flour(maida) -3/4 cup
  • Oats-1/2 cup(quick cooking oats
  • Peanut-2 tbsp(roasted & crushed)
  • Coconut grated(desiccated)-1/4 cup
  • Sugar- 3/4 cup
  • Honey-1/2 tbsp                                     
  • Baking soda-1/4 tsp
  • Butter-1/2 cup(softened)
  • Water-1 to 2 tbsp




Method:
Sift maida and baking soda in a bowl.
Beat butter and sugar until fluffy and light.
Add maida,oats,peanut,coconut and honey in butter and sugar mixture,mix well.
Add water and make soft dough.
cover and refrigerate the dough for 20 to 30 minutes.
preheat the oven  at 350 F or 180 c.
Divide the dough into equal portion and shape them square or
round cookies with your palms.
place on greased baking tray and bake for 12 to 15 minutes or
till the cookies are golden brown.
cool completely and store in air tight container.
enjoy with hot cup of tea.

Eggless Orange Cake

I came across this recipe from Nishamadhulika, i slightly adjusted  the recipe to suite our taste which prepared by fresh orange juice and orange zest. It makes cake super soft,I tried and it came out so well and my whole family just loved it.so do try this easy and foolproof recipe for this holiday season.


Ingredients:
  • All purpose flour(maida)-1cup
  • Sugar powder-1/2 cup
  • Milk powder -1tbsp
  • Orange juice-1/4 cup              
  • Orange Zest(peel)-1 tsp
  • Oil-1/2cup
  • Baking soda-1/4 tsp
  • Baking Powder-1/2 tsp




Method:
Grate some orange peel(Zest).
Cut the orange into halves and squeeze out the juice.
Preheat the oven at 350 F or 180 c. Grease the cake pan and keep aside.
Sieve the flour,baking powder, baking soda and mix well.
In a mixing bowl take orange juice and milk powder and mix well.
Add sugar,oil orange rind  and mix well.
Add maida and baking powder and baking soda mixture into it.
Mix well without any lumps.
Pour the batter onto prepared pan and bake for 25 to 30 minutes.
Or until the Toothpick comes out clean.
Cool for five minutes and invert and cool down and cut into desired slice.
Enjoy with hot cup of tea.
Note:
You can make with whole wheat flour instead of maida.

Bhindi/Okra with Coconut and Corainder

This is one of very easy and delicious dry curry .I use coconut, coriander and red chili to makes curry
More flavorful and tasty.I hope you will try this simple and delicious bhindi.



Ingredients:
  • Bhindi- 1/2 lb ( washed and wiped and cut it into rounds)
  • Coconut dry(grated)-1/2 cup
  • Coriander seeds-1 tbsp
  • Red chili(whole) - 1-2
  • Cumin seed- 1/2 tsp
  • Onion - 1(chopped)
  • Hing- a pinch
  • Turmeric powder-1/2 tsp
  • Salt to taste
  • Oil-1 tbsp
  • Coriander leaves for garnishing


Method:
First dry roast coriander,coconut and red chili.
Let them cool and grind to a coarse powder into mixer.
Heat oil in a pan add cumin seed, when they crackle add hing
And onion fry for 2 to 3 minutes.
Now add turmeric powder, and mix well add bhindi mix everything nicely.
Cover and cook on medium heat till bhindi turns light browned in color.
Keep stirring in between while it is getting cooked.
Add grounded coconut and Coriander ,red chili and mix well.
Cover and cook for another 2 to 3 minutes.
Turn off the heat and garnish with coriander leaves and grated coconut.
Enjoy!!!

Butter Paneer Masala(Paneer Makhani)

Butter paneer masala is most common dish in Indian restaurant menus and it is my family's favorite too, so i try to prepare different paneer dishes.butter paneer masala is one of them which i make frequently. it is quite easy to make at home.Hope you all like it.



Ingredients:
  • Paneer cubes- 2 cups
  • Tomato- 4-5 medium size( roughly chopped)
  • Onion-1 small size (roughly chopped)
  • Cashews-10 -12
  • Ginger garlic paste- 1tsp                                                  
  • Kasoori methi-1 tsp                                                                
  • Red chili powder- 1 tsp ( I used Kashmiri red chili powder)
  • Green cardamom powder-  1/4 tsp                                              
  • Fresh cream or milk-1/2 cup ( I used half & half)
  • Garam masala-1/4 tsp
  • Coriander powder-1/2tsp
  • Butter -2 tbsp
  • Oil-1/2 tbsp
  • Salt to taste
  • Coriander leaves for garnishing


Method:
Heat half butter and oil into pan add onion fry for 1 or 2 minute, then add cashew pieces
And tomato saute until soft. Turn off the heat let it cool down slightly.
Then grind to smooth paste.
Again  in same pan heat remaining oil and butter add this paste and cook till
Oil separating from edges.add ginger garlic paste cook till raw smell disappear.
Add kasoori methi,red chili powder,garam masala,coriander powder.stir and cook for
1 or 2 minutes now add 1and 1/2 cups water and simmer for 3 to 4 minutes.
Add paneer and cream cook for another 2 to 3 minutes,and last add cardamom powder
Mix well let it boil for 2 minutes.
Turn off the heat and garnish with coriander leaves.

Instant Corn Dhokla

Who will say no to this instant corn dhokla because it is very nutritious,healthy and it has lots of fiver and very unique taste and they are really easy to make  as well as it doesn't need any fermentation. 
 

Ingredients:
  • Corn-1 cup ( I used frozen)
  • Rava(suji)-1 cup
  • Curd- 1/2 cup
  • Ginger and green chili paste- 1tsp
  • Fruit salt(eno powder)- 1tsp      
  • Lemon juice-1 tbsp
  • Salt to taste
 For temper:                            
  • Oil -1/2 tbsp
  • Mustard seed - 1 tsp
  • Green chili- 2
  • Hing( asafetida)-a pinch
For garnishing:
  • Coriander leaves, grated coconut


Method:
Take rava and curd in a mixing bowl and mix it well.
put corn seed in a mixer and blend it till smooth.
Add corn paste into rava and curd mixture,mix properly.
Now add ginger and green chili paste,salt,lemon juice
Mix everything nicely.grease the plate with some oil.
Heat 2 cups of water in a  deep wide pan and cover and let the water start boiling.
Just before steaming add fruit salt and  mix gently.
Immediately pour the mixture into greased deep plate.
Steam for 15 to 20 minutes or until a toothpick inserted in the center of the
Dhokla comes out clean.
Remove the plate and keep aside to cool slightly.cut it into squares.
Heat oil in a pan add mustard seed, green chili,and hing
When the seeds start to crackle, turn off the heat.
Pour over the dhoklas and garnish with chopped coriander and grated coconut.
Serve with Green chutney and Tamarind Chutney.

Green chili and Garlic Chtuney

Today i am going to share very spice and flavorful chutney recipe,This chutney is typically from Maharashtra, traditionally made in mortar and pestle(ओखली या खलबट्टा )  but i  made in mini chopper(food processor) it tastes really good,try it out and enjoy!!!

Ingredients:
  • Green chili-10-12(roughly chopped)
  • Garlic clove-8-10
  • Coriander Leaves-1cup(roughly chopped)
  • Cumin seed-1tsp
  • Oil-1/2 tbsp                                                             
  • Salt- to taste


Method:
Heat oil in a pan add cumin seed and when they crackle add chili
and garlic saute for 1 minute, then add chopped coriander leaves.
Add salt and give a nice stir,cover and cook for 2 to 3 minutes on medium
heat.turn off the heat and let it cool.
Transfer to a food processor and make a coarse paste.
Note:
keep in airtight container in the refrigerator for up to 2 weeks.

Poha Cutlets

This simple dish can be made quickly and easily,it can served  as a delicious appetizer,evening snack or breakfast.kids would definitely love this so try out this crispy appetizer.

Ingredients:
  • poha(beaten rice)-1 cup
  • potato-2 medium(boiled,peeled and mashed)
  • Bread crumbs-1/2 cup
  • Besan( gramflour)-2tbsp                                         
  • Peanut-2 tbsp
  • Turmeric powder-1/4 tsp
  • Green chilli -2 finely chopped
  • Ginger -1 tsp (grated)
  • Chat masala-1tsp
  • Coriander leaves-1 tbsp(finely chopped)
  • Salt to taste
  • Oil for frying
Method:
First dry roast peanut and once cool, grind coarsely.
Wash poha and soak for 2 minutes and drain.
Mix mashed potato,soaked poha,peanut,salt,ginger,turmeric powder
Chopped coriander,green chili,chat masala and mix everything properly.
Make a smooth dough.
Divide the mixture into equal portion and shape them into square or round cutlet.
And place it in bread crumbs,press them from all the sides.
Deep fry or shallow fry the cutlets on medium heat till golden brown in colour
From both sides.
Serve hot with tomato ketchup or green chutney.
Note:
Suji (rava) can be used instead of bread crumbs.

Eggless Dates Cake

This is one of my family's favorite cake and also the first cake which i learnt from my friend in early days of cooking,since i have been baking this.it is very simple and healthy cake because dates are a good source of iron,calcium,potassium and fiber,so try out this soft,moist and healthy cake for holidays.i hope you will like it.


Ingredients:
  • Maida(All purpose flour)-2 cup
  • Dates(खजूर) (seedless)-16 to 18
  • Sugar- 1 cup
  • Oil-1 cup
  • Milk -1 cup
  • Baking soda-1 tsp
  • Baking powder- 1 tsp


Method:
Soak dates with warm milk for 30 to 35 minutes .
Grind the dates into fine paste. Preheat the oven at 350F for 15 minutes.
In a mixing bowl sieve maida along with baking powder and baking soda.
Now add sugar and mix properly.
Add dates paste and oil and again mix well.
Pour the prepared batter into greased cake pan.
Bake for 35 to 40 minutes or check it with tooth pick if comes out clean.
Cool down completely and cut it.
Enjoy!!!
Note:
If you are using brown dates so soak them for  2 to 3 hours in warm milk.
