Dahi Vada

Dahi vada is a very famous snack or street food from North India. My Mom-in-law is an expert in making dahi vada, there is only one secret to make perfect dahi vada.if you whip batter with hands for 4 to 5 minutes then only you will get vadas melt in your mouth.


you can add chutneys and curd as per your taste.

 Ingredients:
  • Urad dal(spilt skinless black gram)-1 cup             
  • Cumin seeds-1 tsp
  • Salt to taster
  • Asafetida(hing)-pinch
  • Oil for frying

 
For Serving:
  • Curd- 3 cups
  • Roasted cumin powder-1 tsp
  • Red chili powder-1 tsp
  • Imli ki chutney
  • Green chutney
  • Black salt to taste
  • salt to taste


 Method:
Wash the dal and soak it in water for 4 to 5 hours.
Drain and place in grinder and try to add very little water, grind to a smooth and fluffy paste.
Transfer to a bowl,add the cumin,salt and asafetida and beat by hand until fluffy.
To test if the batter is ready drop pea size batter into a bowl of water if it float on the
Top,that means batter is ready.
Heat oil in a kadahi on medium flame.when its hot shape the batter into small dumplings
Slide them a few at times into the hot oil.cook the vadas  until golden brown.
Remove and keep on paper towel.continue with the remaining paste.
Transfer them to a bowl of hot water and cover.let them soak for 15 minutes.
Squeeze the vadas between your palms to remove excess water.
Put  chilled curd in a bowl and whisk until smooth.
keep the vadas in serving dish and pour the curd to cover the vadas
Sprinkle with the cumin,chili powder,salt,black salt and drizzle both chutneys and serve.

Bread ke pakode

Today i want to share a very tasty and delicious pakoda recipe. pakodas are very famous snack in India and perfect for winter ,rainy days or potluck. if you have some leftover bread so try this easy and spicy pakoda.

Ingredients:
  • Besan(gram flour)-2 cup
  • Ajwain-1 tsp
  • Turmeric powder-1/4 tsp
  • Whole coriander crushed-1/2 tbsp
  • Red chili powder-1/2 tsp
  • Green chili-2 chopped
  • Coriander leaves-1 tbsp
  • Bread-6 slices
  • Salt to taste
  • Oil for fry


Method:
In a mixing bowl,put besan,crushed coriander seed,ajwain,chili powder,turmeric powder
And Corainder leaves,green chili and add 1/2 cup water and whisk well and make a smooth batter.
Make sure there are no lumps. Batter should be little thick like dosa batter.Keep aside.
Cut off the edges of bread.cut them into triangles or small square shapes.
Heat oil in a kadahi on medium high.
Dip the bread pieces into batter one by one and fry in oil until both sides are golden brown.
And place on paper towel.
Serve hot with tomato ketchup.

Bhindi Kadhi(okra with curd)

Bhindi is also known as lady finger and okra,and it is a very popular vegetable with Indians.People cook it in many ways.My mom used to make this Kadhi for a change.The Bhindi Saute in some spice and cooked in curd and besan mixture or you can fry bhindi separately then add into cooked curd mixture.Try this out and let me know.


Ingredients :
  • Bhindi- 8 to10 large( chopped )
  • Curd-2 cups(sour)
  • Besan(gram flour)- 2 to 3 tbsp
  • Turmeric powder-1/4 tsp
  • Red chili powder-1/2 tsp
  • Salt to taste
  • Oil-2 tbsp
  • Mustard seeds-1/2 tsp
  • Methi seeds-1/4 tsp
  • Hing- a pinch
  • Curry leaves-5 to 6
  • Green chili- 2 chopped
  • Coriander leaves for garnishing


Method:
Mix curd, besan,turmeric powder,salt,red chili powder and mix well without any lumps.
Add 2 and 1/2 cups water and mix it again and keep aside.
Heat oil in a pan add mustard seeds and methi seeds let them splutter then add hing
And curry leaves saute for few seconds now add chopped bhindi and cook the okra
Uncovered for 4 to 5 minutes. now add curd and besan mixture.
Stirring continuously til one boil.reduce the heat and simmer for 6 to 8 minutes.
Turn off the heat and garnish with chopped coriander.
Serve with plain white rice.

Sweet Saffron Rice(Meethe Chawal)

Sweet saffron rice is very easy to make and taste great with any meal.The combination of sugar,ghee
Cardamom,dry fruits and saffron flavor makes this sweet rice very tempting and delicious.



Ingredients:
  • Basmati rice - 1 cup
  • Sugar-1/2 cup
  • Ghee-2 tbsp
  • Milk-3/4 cup
  • Saffron-1/4 tsp
  • Green cardamom- 2 to3
  • Orange or yellow color-a pinch(optional)
  • Dry fruits-3tbsp(raisin,cashew,almonds,coconut)


Method:
Soak the saffron in warm milk.
Wash and soak rice for 15 to 20 minutes.
Heat 4 cups of water when water starts boiling add cardamom and soaked rice.
Cook until rice get 80% cooked not fully cooked.
Drain the excess water and spread the rice in plate.
In a separate pan add ghee roast the almonds,cashew,pistachios,raisin and coconut.
Now add saffron milk,sugar, color and rice,mix well and cover and cook on slow heat until the milk is absorbed completely or rice has cooked.
Fluff the rice with fork.serve warm or cold.

Corn and Spinach paratha

Another healthy version of paratha This is comfort food for us especially my son is very fond of this paratha whenever i ask my son, what paratha he wants he immediately say corn spinach paratha.it is very nutritious and healthy paratha and easy to make.

Ingredients: 
  • Corn-1cup(i used frozen)
  • Spinach-1and 1/2 cup(finely chopped)
  • whole wheat flour(aata)-2 cups
  • Turmeric powder-1/4tsp
  • Ginger grated-1/2tsp
  • Salt to taste
  • Red chili powder-1/2tsp
  • Oil for frying 

Method:
Mix all the ingredients tougher except oil in a mixing bowl,mix properly.
Add water as needed to make soft and firm dough.
Knead the dough for couple of minutes,cover and keep aside for 10 to15 minutes.
Divide the dough into equal size portion roll each one into a smooth ball.
Take ball and press it in some dry flour on both sides.roll into small chapati size circle.
Place the paratha in the heated pan,using a little oil until both sides are golden brown.
Serve hot with pickle or curd.

Til Chikki

Wishing you all a very happy makar sankranti,pongal,and lohri. Try this easy to make and healthy sweet snack.


Ingredients:
  • Til(sesame seed)-1 cup
  • Gud(jaggery)-1cup
  • Ghee- 1 tsp



Method:
Heat heavy bottomed pan  and roast sesame seed till they are lightly golden brown.
Transfer into bowl and keep aside.
Heat ghee in same pan and add gud,keep stirring continuously on medium heat.
Till the gud melts.
Meanwhile grease the flat plate and rolling pin(belan) with some ghee.
Add roasted til in gud syrup and mix properly.
Turn off the heat and immediately pour the mixture into greased plate.
Roll it with greased rolling pin as thin as you can.
Cut and make shapes with knife while its still hot.
Allow it Cool for 10 to 15 minutes.
Separate the pieces and store an airtight container.

Oats stuffed Spinach Paratha

As we all know oats has loads of health benefits. want to know more health benefits of oats click here. you can make this healthy and nutritious  paratha with plain dough instead of spinach


Ingredients:
For the dough:
  • Spinach- 1 cup (roughly chopped)
  • Whole Wheat flour(atta)-1 cup
  • Salt to taste
For the stuffing:
  • Oats-1 cup
  • Ginger grated-1 tsp
  • Red chili powder-1/4 tsp
  • Green chili -2 chopped
  • Turmeric powder1/4 tsp
  • Garam masala -1/2 tsp
  • Salt to taste



Other ingredients:
  • Oil for cooking
  • Wheat flour for rolling




Method:
Blend spinach in blender with adding little amount of water.
Take wheat flour in a mixing bowl,add spinach Purée,salt to taste
Mix well and little amount of water and make a soft dough.
Cover and keep aside for 15 to20 minutes.
Mix oats,ginger,garam masala,green chili,red chili powder
Salt  and sprinkle some water mix well. Divide this stuffing
In equal size balls.
Take same size ball out of the dough. Roll it out into small disc.
Place the oats ball in the center and bring it together all sides and press gently 
To seal all sides.dust in the flour and roll out into circle.
Place paratha on medium hot tava,cook for 2 minutes and turn the paratha
Drizzle some oil on it spread properly on surface.cook till golden brown.
Turn again drizzle oil the other side and cook until golden brown.
Repeat with the remaining parathas.
Serve hot with curd.

Phirni( Rice pudding) 100th post

Today, I am very happy to share my 100th post. I can't believe that,I have completed my first century.
It has been a great experience with love and support from all of my  fellow blogger friends,family members and dear friends.thank you everyone for your support and encouragement.I hope you All continue to appreciate me the same way to do more.


So i want to celebrate this occasion with This is very easy to make rice pudding (phirni),which prepared with coarse Rice in milk with saffron and pistachio. You can add different nuts like cashew,walnut, almonds Which you like.


Ingredients:
  • Rice-1/4 cup
  • Milk- 4 cups
  • Sugar-1/2 cup( to taste)
  • Pistachio- 10 to 12( shredded)
  • Saffron-8 to 10 (thread)
Method:
Wash and soak rice for 20 minutes.
Soak Saffron in 1 tbsp milk.
Drain the water from rice and grind to coarse powder.
Heat milk in a heavy bottomed pan, when milk starts boiling
Add  rice powder, and stirring continuously till it gets thick consistency.
Add sugar and saffron milk and stir and boil for another 3 to 4 minutes.
Turn off the heat and garnish with pistachio pieces.
Serve hot or cold.

Spinach/palak and Moong dal idli

There are many varieties of idlilis like rava idli,oats idli, rice idli and many more. but here i have used spinach and moong dal,This combination is very healthy and it has all nutritious value. It is perfect dish for breakfast or it can be served in lunch and dinner.



Ingredients:
  • Moong dal ( split yellow or green)-1 cup  
  • Spinach -1and 1/2 cup (finely chopped)          
  • Curd-2 tbsp
  • Suji(rava)-1 tbsp
  • Fruit salt(Eno)-1/2 tsp
  • Green chili-1 chopped
  • Salt to taste


Method:
Wash and soak moong dal for 2 hours.
Soak suji with curd for 10 to 15 minutes.
Grind dal,spinach and green chili to smooth paste without adding water.
Transfer into a mixing bowl,add soaked suji and curd mixture.
Add salt and mix well.
Heat 1 to 2 cups of water in idli steamer on medium heat.
Grease idli moulds with some oil.
Add eno salt to the batter, you will notice bubbles on the surface of the batter.
Mix gently. Pour batter in greased moulds and steam it on medium heat for
10 to 15 minutes or idlis are done.
When its cool down slightly and remove from moulds.
Serve with Coconut Chutney or samber.
