Khandvi

I love this delicious,bright yellow savory,snack dish from Gujarat, I learned to make this dish long back from one of my Gujarati friend.Making khandvi takes some practice to know when the batter is cooked to the correct consistency.


Ingredients:
  • Besan(gram flour)-1 1/4  cup
  • Curd-1 cup
  • Water-2 cup
  • Ginger paste-1/2 tsp
  • Green chili paste1/4 tsp
  • Salt to taste
  • Turmeric powder-1/4 tsp
  • Hing(asafetida)- pinch
  • Oil-1 tsp
  • For tampering :
  • Mustard seeds-1 tsp
  • Oil-1 tbsp
  • Coconut for garnishing
  • Coriander leaves for garnishing

Method:
Put the besan,curd,turmeric powder,green chili paste,ginger paste,hing,oil and salt
Mix well until smooth.
Add water and make a smooth batter with no lumps.
Pour mixture into heavy bottomed pan, place it on medium heat and cook for 5 to 7
Minutes,stirring continuously, after 8 minutes or until the mixture is thick
To check if the batter is cooked,take teaspoonful of it and spread it thinly on surface.
Let it cool for a minute.Then lift it up  the surface by rolling it up.
If the batter comes off the surface it means that it is cooked enough.
Remove from the heat and working quickly,spread the batter with flat sputlla
Over surface as thinly as possible,while the batter is still hot.Let cool completely.
Cut into 2 inches wide and roll them up tightly. Pick up each roll gently and place in
A serving dish.
Place a small pan on medium heat and add oil.when oil is hot add mustard seed.
Pour this tempering over the khandvi.
Sprinkle with the coconut and coriander leaves.
Serve immediately.

Aloo Paratha

Aloo Paratha is one of the most popular paratha in North India,this spicy potato stuffing paratha will take a little practice to get just right.you can make this for breakfast,lunch or dinner,serve hot with curd or pickle.



Ingredients:
  • Atta(whole wheat flour)-2 cups
  • Potatoes-3 boiled,peeled and mashed
  • Turmeric powder-1/4 tsp
  • Salt to taste
  • Onion-1/4 cup(finely chopped)
  • Coriander leaves-1 tbsp( chopped)
  • Red chili powder-1/2 tsp
  • Chat masala-1/4 tsp
  • Oil for cooking

 

 




Method :
In a mixing bowl add atta,turmeric powder and salt,mix well.
Add enough water and knead to make a smooth dough.
Divide the dough into smooth balls,Cover and keep aside for 10 minutes.
In another bowl add mashed potatoes,onion,coriander leaves,chat masala
Red chili powder ans salt, mix well.
Divide the potato mixture into equal portion and shape into balls.
Take dough ball and roll it with a rolling pin into 3 inch rounds.
Place a potato ball in the center,bring the edges to enclose it and pinch extra part on top.
Flatten the balls and sprinkle with a little flour and roll them with rolling pin into 6 inch
Rounds.
Heat a tawa( griddle) on medium heat.then place a paratha on it and cook for 2 to3 minutes.
Turn the paratha,drizzle some oil on it and spread it all over paratha.
Turn again and drizzle some oil other side  and cook until golden brown from both side.
Serve hot with curd.

Oats idli

Whenever I think some healthy breakfast, always comes in my mind is oats.Nobody likes eating oats with milk at my home,so i always try to make different recipe with it.I'll share more recipe later.This instant version of oats idli is very healthy and easy to make and it can be made very quickly too.


Ingredients:
  • Oats-1 cup(I used Quaker oats)
  • Suji(semolina)-1/4 cup
  • Curd-1/4 cup
  • Mix vegetables-1/4 cup( I used peas,corn and carrots)   
  • Ginger-1/2 tsp(grated)
  • Hing(asafetida)-pinch
  • Mustard seeds-1/4 tsp
  • Curry leaves- few
  • Turmeric powder-1/2 tsp
  • Oil-2 tsp
  • Baking soda-1/4 tsp
  • Eno-pinch
  • Salt to taste



Method:
Dry roast oats on medium till nice aroma comes.
Powder the oats coarsely in the mixer,do not make fine powder.
Dry roast suji for 3 to 4 minutes till it changes little brown color.
Heat oil in a pan add curry leaves,mustard seed and hing saute for few seconds.
Add grated carrots,peas and corn,salt,turmeric powder fry for 2 to 3 minutes.
In a mixing bowl add coursed oats,suji,curd mix well.
Add vegetables,baking soda and add little water so batter does not become watery.
Before pouring into idli moulds add eno salt and mix thoroughly.
Grease idli moulds with oil and fill them with the batter.
Fill water into idli cooker (almost 1 and 1/2 cups) and when water starts boiling.
Place the idli stand,cover with lid and steam for 12to14 minutes.
Allow to cool for 5 minutes and scoop out and serve with Coconut chutney.

Spinach/palak and Moong dal idli

There are many varieties of idlilis like rava idli,oats idli, rice idli and many more. but here i have used spinach and moong dal,This combination is very healthy and it has all nutritious value. It is perfect dish for breakfast or it can be served in lunch and dinner.



Ingredients:
  • Moong dal ( split yellow or green)-1 cup  
  • Spinach -1and 1/2 cup (finely chopped)          
  • Curd-2 tbsp
  • Suji(rava)-1 tbsp
  • Fruit salt(Eno)-1/2 tsp
  • Green chili-1 chopped
  • Salt to taste


Method:
Wash and soak moong dal for 2 hours.
Soak suji with curd for 10 to 15 minutes.
Grind dal,spinach and green chili to smooth paste without adding water.
Transfer into a mixing bowl,add soaked suji and curd mixture.
Add salt and mix well.
Heat 1 to 2 cups of water in idli steamer on medium heat.
Grease idli moulds with some oil.
Add eno salt to the batter, you will notice bubbles on the surface of the batter.
Mix gently. Pour batter in greased moulds and steam it on medium heat for
10 to 15 minutes or idlis are done.
When its cool down slightly and remove from moulds.
Serve with Coconut Chutney or samber.

Poha Cutlets

This simple dish can be made quickly and easily,it can served  as a delicious appetizer,evening snack or breakfast.kids would definitely love this so try out this crispy appetizer.

Ingredients:
  • poha(beaten rice)-1 cup
  • potato-2 medium(boiled,peeled and mashed)
  • Bread crumbs-1/2 cup
  • Besan( gramflour)-2tbsp                                         
  • Peanut-2 tbsp
  • Turmeric powder-1/4 tsp
  • Green chilli -2 finely chopped
  • Ginger -1 tsp (grated)
  • Chat masala-1tsp
  • Coriander leaves-1 tbsp(finely chopped)
  • Salt to taste
  • Oil for frying
Method:
First dry roast peanut and once cool, grind coarsely.
Wash poha and soak for 2 minutes and drain.
Mix mashed potato,soaked poha,peanut,salt,ginger,turmeric powder
Chopped coriander,green chili,chat masala and mix everything properly.
Make a smooth dough.
Divide the mixture into equal portion and shape them into square or round cutlet.
And place it in bread crumbs,press them from all the sides.
Deep fry or shallow fry the cutlets on medium heat till golden brown in colour
From both sides.
Serve hot with tomato ketchup or green chutney.
Note:
Suji (rava) can be used instead of bread crumbs.

Masala Poori

Masala poori is a very quick and easy to make snack or breakfast and tastes great with any pickle or dry potato curry ,you can add flavor as per your choice like carom( ajwain seed),crushed black pepper etc. and try to serve hot so taste will better.

Ingredients:
  • Wheat flour( atta)- 1cup
  • Besan ( gram flour)-1 tbsp
  • Kasoori methi-2 tsp
  • Turmeric powder- 1/2tsp
  • Crushed cumin seed- 1 tsp
  • Chili powder- 1/2 tsp
  • Salt to taste
  • Oil for frying


Method:
Mix all the ingredients in a mixing bowl except oil and mix properly.
Knead into the  stiff dough using little amount of water.
Cover and keep aside for 10 to 15 minutes.
Divide the dough into small size balls, roll them out into small size disk.
Heat oil into deep pan( kadahi) on medium high heat.
Deep fry each puri one at a time till golden brown color from both side.
Keep on paper towel and Serve hot.

Broken wheat and Rajma Dosa

Dosa is very popular snack or breakfast item from south India. Traditionally dosa made with rice and urad dal.it takes lot of time and patience.but i got this recipe from my sis-in-law; since then i prepared frequently in my house Try out this easy and no fermentation,healthy breakfast or snack item.

Prep time:4 hrs
Cook time :30 minutes
Recipe type: South Indian
Ingredients:
  • Broken wheat(daliya)-2cups
  • Green Moong Dal-1/2cup
  • Chana Dal-1/2cup
  • Rajma-1/4cup
  • Methi ( fenugreek)seeds-1/4tsp
  • Salt-to taste
  • Oil   


 Method:
Wash and soak dals,rajma and methi seed in water for 4 to 5 hours.
Soak broken wheat in another bowl for 4 to 5 hours.
After 4 hours,drain the water from dals, broken wheat and rajma.
then Grind them to a smooth batter,add required water while grinding.
pour the mixture into big bowl,Add salt and mix well. Batter is ready to make dosa.
Heat a tava or nonstick pan, add a ladle full of batter and spread it well
All around with the back of  ladle.
Drizzle some oil all around the dosa and let it cook for minutes or two minutes.
Flip it and cook the other side also.
Serve hot with coconut mint chutney and samber.

Corn and Methi Kabab

Corn and methi kabab is very healthy,delicious and preparation is quite easy, made with corn,methi and potato.Try out this flavorful and perfect tea time snack.


Ingredients:
  • Corn-1cup( boiled & mashed)
  • Methi (fengureek leaves)-1cup finely chopped
  • Potato-1/2cup ( boiled &mashed)
  • Rice flour-2tbsp
  • Coriander leaves-1tbsp(chopped)
  • Chat masala-1tsp
  • Chilly powder-1tsp(to taste)
  • Turmeric powder-1/2 tsp
  • Salt-to taste
How to prepare:
Coarsely mash potato and corn in a big bowl.
Add chopped methi,coriander leaves,chat masala,salt,turmeric powder,chilly powder and rice flour.
Mix everything properly. Shape it into small sized patties.turn on the heat on medium.
Shallow fry the patties on non stick pan with some oil,until golden brown on both sides.
Serve hot with tomato ketchup or Green chutney

You can deep fry patties too.

Idli Upma

This is the perfect way of using leftover idli. It is very yummy in taste and very quick to
 Make as well. It can be made for school snack for kids.

Ingredients:
  • Idli-5-6
  • Onion-1(chopped)
  • Bell pepper-1/2 cup (chopped all color)
  • Mustard Seed-1/4tsp
  • Hing- a pinch
  • Curry Leaves-few
  • Turmeric powder-1/4tsp
  •  Salt-to taste


Method:
Cut idlis in to small pieces. keep aside.
Heat oil in pan add mustard seed let it crackle, add green chilli
hing saute for few seconds then add onions fry for few minutes
add bell pepper fry for couple of minutes add turmeric powder
and salt mix everything properly.
add idli pieces mix well again. turn off the heat.
garnish with chopped coriander leaves.
Enjoy!!!

You can crumble the idli instead of cutting.
You add vegetables of your choice like carrot,  peas etc.

Oats Upma with vegetables

Oats upma is a very healthy upma for breakfast, Or can be make It for evening snack. Its very low in calories & high in iron and fiber. It can be prepared in a jiffy.
Ingredients:
  • Oats-1cup
  • onion-1 finely chopped
  • Beans-1/4 cup chopped
  • Carrot-1/4 cup chopped
  • peas-1tbsp
  • Hing (asfiedta)-pinch
  • Ginger(grated)-1/4tsp
  • Cumin seed-1/4tsp
  • Mustard seed -1/4tsp
  • Oil-1tbsp
  • Green chilli-1 chopped
  • Salt -to taste


Preparation:

Dry roast oats till crisp and nice aroma comes. Keep aside.
Heat oil in pan add cumin seed, mustard seed let it crackle.
Add onion, green Chilli and ginger sauté till it turn little brown.
Add all chopped vegetables cook for 3 to 4 minutes or till they turn little soft.
Add water and salt and covered it. When water start boiling add
Oats and mix it properly and cook till the oats are done.
Garnish with chopped coriander leaves.
Serve with coconut chutney raita or pickle.
Enjoy!!! 
Note:
Make sure do not add too much water as upma become too soggy.
 You can add any vegetables of your choice.

Spinach and Cabbage paratha

This is the perfect recipe for them, who don’t like to eat vegetable.Spinach and cabbage has loads of health benefits. They are excellent source of vitamin K also. it helps keep bones Healthy and strong.  These paratha tastes great with plain yogurt with salt and roasted cumin powder.And any raita,chutney or pickle of your choice.


Ingredients:
  • Spinach (finely chopped)-1cup
  • Cabbage (grated)-1/4cup
  • Wheat flour (atta)-1and ½ cup
  • Cumin seed -1/4tsp
  • Salt-to taste
  • Turmeric powder-1/4tsp
  • Green Chilli-2(finely chopped)
  • Ginger (grated) - 1/2tsp
  • Oil for cooking
Preparation:
Take wheat flour, spinach, and cabbage in a big bowl mix it well.
Add all the ingredients and water except oil to knead into soft dough.
Divide the dough into lemon size balls.
Roll out each ball into circle with using little flour.
Heat a pan and place the paratha on it cook for a minute.
Flip the paratha and drizzle some oil on both sides, cook till golden spots appear.
Enjoy your healthy paratha with curd or pickle.

palak ke Muthiya

Muthiya is steamed dumpling common Gujarati dish,which is very healthy and tasty savory snack.It can be made with cabbage, methi, bottle gourd or any other veggies of your choice.


Ingredients:
  • palak(spinach) finely chopped-2cups
  • Wheat Flour-1cup
  • Besan(gram flour)-1/2 cup
  • Rava(semolina)-1/2 cup
  • Turmeric powder-1/2tsp
  • Coriander leaves-1tbsp
  • Ginger(grated)-1tsp
  • Turmeric Powder-1/2tsp
  • chilli powder-1/2tsp
  • Oil-1tsp
  • Salt to Taste
Tempering/Tadka
  • Oil-1tsp
  • Mustard seed-1/2tsp
  • Sesame seeds-1tbsp
  • Asafetitda(Hing)-pinch 
  • Coconut-for garnishing
  • Coriander leaves-for garnishing
Preparation:
Take besan,semolina,aata and spinach and other ingredients
in mixing bowl and mix well and make a smooth soft dough with the  help of little water.
Grease palm with some oil make rolls from the dough.  
Make Rolls as shown in the picture.
Place the rolls on greased sieve and steam in a steamer for 15 -20 minutes.
if the muthias are done, insert a toothpick in the centre. If it comes out clean, the muthias are cooked.
Let them cool and cut it into ½ inch thick slices.
Heat oil in pan adds mustard seed when they start crackle add sesame seed and asafetida.
Add sliced muthiya and mix it well. Turn off the heat and garnish with
chopped coriander leaves and grated coconut.
Enjoy this healthy snack  with green chutney or tomato ketchup

Cucumber Ka Chilla(Cucumber Pancake)

Ingredients:
  • Cucumber-2cups (grated)
  • Besan(gram flour)-1 cup
  • Rice flour-1/2 cup
  • Coriander leaves-1tbsp (finally chopped)
  • Cumin seed-1/2tsp
  • Green chilli-2(finally chopped)
  • Ginger-1/4tsp(grated)
  • Salt- to taste
  • Oil-for cooking
Preparation:
Mix all the ingredients in a bowl gradually add water to
get dropping consistency batter.
Heat a non stick pan on medium heat. add little oil on it and spread evenly.
pour a spoonful of batter on pan, spread it in circular shape
wait 40- 50 seconds for it to be done on one side.
Drizzle some oil and turn it over, cook other side till it
turns to little brown in color.
serve hot with tomato ketchup.
