Broken wheat and Rajma Dosa

Dosa is very popular snack or breakfast item from south India. Traditionally dosa made with rice and urad dal.it takes lot of time and patience.but i got this recipe from my sis-in-law; since then i prepared frequently in my house Try out this easy and no fermentation,healthy breakfast or snack item.

Prep time:4 hrs
Cook time :30 minutes
Recipe type: South Indian
Ingredients:
  • Broken wheat(daliya)-2cups
  • Green Moong Dal-1/2cup
  • Chana Dal-1/2cup
  • Rajma-1/4cup
  • Methi ( fenugreek)seeds-1/4tsp
  • Salt-to taste
  • Oil   


 Method:
Wash and soak dals,rajma and methi seed in water for 4 to 5 hours.
Soak broken wheat in another bowl for 4 to 5 hours.
After 4 hours,drain the water from dals, broken wheat and rajma.
then Grind them to a smooth batter,add required water while grinding.
pour the mixture into big bowl,Add salt and mix well. Batter is ready to make dosa.
Heat a tava or nonstick pan, add a ladle full of batter and spread it well
All around with the back of  ladle.
Drizzle some oil all around the dosa and let it cook for minutes or two minutes.
Flip it and cook the other side also.
Serve hot with coconut mint chutney and samber.

Tomato Rice

This delicious rice recipe is not only tasty but procedure is very very simple,when you are in hurry
do try this one pot meal.
Ingredients:
  • Rice-1cup
  • Tomato-3 big (chopped)
  • Onion-1chopped
  • Ginger garlic paste-1tbsp
  • Green Chilli-1(finely chopped)
  • Mustard seed-1/4tsp
  • Cumin seed-1/4tsp
  • Red chilli-1/4tsp
  • Salt- to taste
  • Oil-1tbsp
  • Curry leaves-1sprig
  • Chana /urad dal-1/4tsp each
Preparation:

Wash and soak rice for 10 minutes. Cook in rice cooker or pressure cook for 2 whistles
On medium heat with 2 cups of water.
Heat oil in pan add cumin seed, mustard seed let it crackle add chana and urad dal
After few seconds add chopped onion and curry leave, fry till golden brown.
Add green Chilli & ginger garlic paste sauté till raw smell goes.
Add chopped tomato fry till mushy or oil separates.
Add red Chilli powder, salt and mix well.
Now add this mixture on cooked rice, mix it gently.
Garnish with chopped coriander leaves.
Serve with any raita or pickle.
Enjoy!!!
Note:
You can use leftover rice for this recipe.
You may add green peas and potato also, it gives extra flavor.

Mirchi Ka Salan

Mirchi ka salan is very rich and creamy curry& most popular recipe in Hyderabad. It is very authentic recipe which prepared with sesame seed, coconut, and peanut patse. It can be eaten with biryani or chapatti.I saw this recipe in vah chef and sanjeev kapoor cookery show,I have combined them to suit my taste.
Ingredients:

  • Green Chilli-slit on one side and Deseed (don’t remove the stem)i used jalapeno.
  • Onion-1(finely chopped)
  • Ginger garlic paste-2tbsp
  • Turmeric powder-1/2tsp
  • Cumin powder-1/2tsp
  • Red chilli powder-!/4tsp
  • Cumin seed-1/4tsp
  • Mustard seed-1/4tsp
  • Methi(fenugreek seed)-1/4tsp
  • Hing-a pinch
  • Salt –to taste
  • Curd (yogurt)-1/4cup
  • Curry leaves-6-7
  • Tamarind pulp-1tbsp
  • Oil-for cooking
Masala for gravy:

  • Peanut-1/4cup
  • Coconut1/4cup
  • Sesame seed (white till)-2tbsp
  • Whole coriander seed-1/2tbsp
 preparation:

 First dry roast peanut, sesame seed, coconut & coriander seeds.
 Grind to a smooth paste. Keep aside.
 Heat oil in pan and sauté the chilies till they are soft. Keep them on paper towel.
 In the same oil add the cumin seed, methi, mustard hing and curry leaves.
 When they crackle add onion sauté till onion turn golden brown.
 Add ginger garlic paste sauté till raw smell goes away.
 Add peanut, sesame, coconut, & coriander paste and Fry for a while.
 Add turmeric, cumin powder and red Chilli powder, mix well.
 Add 1&1/2 cups of water and bring it to a boil. Don’t add too much water,
 It should be little thick Gravy.
 Add curd and tamarind pulp and cook until little thick.
 Add fried green Chilli and salt, cook for another 3 to 4 minutes.
 Garnish with chopped coriander leaves and serve hot with rice or chapatti.
 Enjoy!!!
 You can use colored bell pepper or green pepper instead of jalapeno.

Curd Rice

Curd rice is very popular south Indian rice recipe.it is very yummy , easy to prepare and complete healthy meal.This is very simple recipe with unique and delicious taste.

Ingredients:
  • Cooked rice -1 cup
  • Curd-1cup
  • Milk-1/2cup
  • Carrot-1(grated)
  • For Temper:
  • Green Chilli -1or 2 finely chopped
  • Coconut-1tbsp (grated)
  • Cashew nut-4-5
  • Cumin seed-1/2tsp
  • Mustard seed-1/2tsp
  • Curry leaves-a sprig
  • Asafoetida (hing)-1/4tsp
  • Salt to taste
  • Ghee-1tbsp
  • Coriander leaves for garnishing
Preparation:
First mash the rice with curd and milk. Add salt to this.
Mix it properly. Keep aside.
Heat ghee in pan add green Chilli, curry leaves cumin seed, mustard seed
Let it splutter, add  hing,coconut,cashew nut cook for few seconds.
Add this to curd rice mixture.
Add grated carrot and coriander leaves. Mix it well.
Enjoy your curd rice.
Notes:
You can  also add pomegranate and grapes 
You can adjust the milk and curd quantity.

Dahi Bhindi(kerala Style)

Dahi bhindi is tangy dish with coconut and cashew in kerala style. it is simple easy to make and tastes good with chapati.
Ingredients:
  • onion -1(chopped)
  • tomatoes-2(chopped)
  • Bhindi(okra)-1/2 kg
  • curd- 1/2cup
  • Mustard seeds-1tsp
  • Cumin seeds-1tsp
  • Whole red chilli-2
  • Red chilli powder--1tsp
  • Urad dal-1tbsp
  • Curry leaves-6-7
  • coconut-1
  • cashew- 2tbsp
  • Salt to taste
  • Oil -3tbsp
  • Oil for frying
Preparation:
wash and dry the bhindi,cut them into long pieces.
Deep fry and keep aside.
Make a smooth paste of coconut and cashew with little water.
Heat oil, once it is hot add cumin, mustard seeds and urard dal.
Let them splutter, add red chilli and curry leaves, after a while.
Add onion fry until light brown.
Add the tomatoes and cook till soft.
Now add chilli powder, turmeric powder, coconut and cashew paste.
Salt and cook until oil separates.
Whisk the curd with 1/2 cup water and add it to the pan, stir well.
Add the bhindi and cook for few minutes.
Serve hot with chapati and rice.
