Khatta Meetta Karela(Sweet and Sour Bitter Gourd)

I know so many people doesn't like karela because of its bitter taste,but i make it very often because it is very healthy, its very good for diabetes,skin, and its helps to maintain a healthy liver and bladder.i used jaggery and tamarind in it. it goes well with Dal,Rice and chapati as a side dish. try out this khatta meetta karela.
Ingredients:
  • Karela(bitter gourd)-2cups(sliced)
  • Onion-1chopped
  • Cumin seed-1tsp
  • Green chili-2chopped
  • Ginger garlic paste-1tbsp
  • Coriander powder-2tsp
  • Turmeric powder-1/2tsp
  • Red chili powder-1tsp
  • Tamarind paste-1tsp
  • Jaggery(gud)-21/2tsp (grated)
  • Oil-1tbsp
  • Salt to taste
  • Oil for deep frying
  • Coriander leaves for garnishing  

How to prepare:
Heat enough oil in pan and deep fry karela slices till they slightly golden brown.
Drain and keep on paper towel.
Heat 1tbsp oil in pan add cumin seed when they splutters add onion and fry them to till
Golden brown. Add ginger garlic paste sauté till raw smell goes away.
Add coriander powder,turmeric powder,red chili powder and salt mix well.
Add fried karelas and tamarind paste and jaggery and mix well.
Cover and cook on medium heat for 4 to 5 minutes.
Garnish with chopped coriander and serve with dal rice and chapati as a side dish.

Adrarki Gobhi(cauliflower with ginger)

Adaraki gobhi is very easy and simple to prepare.Fresh ginger flavor makes more delicious.


Ingredients:
  • Cauliflower-2 cups(cut into florets)
  • Ginger grated-2tbsp
  • Cumin seed-1tsp
  • Green chilli-2 chopped
  • Turmeric powder-1tsp
  • Red chilli powder-1/2tsp
  • Coriander powder-1tsp
  • Coriander leaves- chopped(for garnishing)
  • Salt- to taste
  • Oil-2tbsp
Preparation:
Heat oil in a pan, add cumin seed let it splutter then add ginger
green chilli and saute for few seconds.
now add cauliflower and mix well, cover it and cook on medium flame
stirring in between till they are half done.
add turmeric powder, coriander powder,red chilli powder and salt
and mix properly.
keep checking once its done garnish with chopped coriander leaves.
Now your tasty adraki gobhi is ready to serve with roti or paratha.

Capsicum Curry (Simple Green pepper Curry)

This curry can be used as a side dish. It is very tasty and easy to prepare. Goes well As a side dish with rice and rotis.
Ingredients:
  • Capsicum (green pepper)-2cut it into cube
  • Onion -1finely chopped
  • Ginger garlic paste-1tsp
  • Cumin seed-1/2tsp
  • Mustard seed-1/4tsp
  • Turmeric powder-1/4tsp
  • Coriander powder-1/2tsp
  • Green Chilli-2finely chopped
  • Coconut powder (shredded)-2tbsp
  • Oil-3tsp
  • Salt-to taste
  • Coriander leaves-for garnishing
Preparation:
Heat oil in pan add mustard seed and cumin seed when they start splutter add
Onion sauté till very little brown add ginger garlic paste when raw smells goes add
Turmeric powder coriander powder sauté for few seconds add capsicum and salt.
Mix it properly. Cook for 5 to 6 minutes on medium flame or capsicum is tender.
Now add coconut stir properly. Cook for 2 to 3 minutes.
Turn off the heat. Finally garnish with chopped coriander leaves.
Enjoy your quick and healthy side dish with rice or chapati.
