Capsicum Masala Curry

Today i am going to share one of my family's favorite capsicum curry which is not only tasty but quite easy to prepare. Capsicum masala curry is the simple yet delicious and crunchy curry. I have used roasted peanut,coconut and coriander seeds and ground to a powder. you can prepare this rich,flavorful and creamy dish for party too. 

Ingredients:
  • Capsicum (green pepper)-2chopped into cubes
  • Coriander powder-1tsp
  • Turmeric powder-1/2tsp
  • Bay leaf-2
  • Cloves-3
  • Cumin seeds-1/4tsp
  • Tomato-2medium chopped
  • Onion-1medium (finely chopped)
  • Ginger garlic paste -1tbsp
  • Oil for frying -1tbsp+1tbspfor cooking
  • Salt -to taste


Ingredients to roast:
  • Peanut-1/4 cup
  • Coriander seed -1tsp
  • Red chili (whole)-1-2
  • Methi seed-1/4tsp
  • Coconut- 1tbsp ( I used dry coconut powder)
Method:
Dry roast all the ingredients under to roast on medium heat one by one.
Cool completely and grind them into powder.
Grind tomatoes into smooth paste and keep aside.
Heat oil into pan shallow fry capsicum pieces and keep on paper towel.
Heat oil in same pan add cumin seed, bay leaf, and cloves.
Let them crackle then add onion and fry till translucent .
Add ginger garlic paste fry till raw smell goes away.
Add tomato paste and fry till the oil starts to separate.
Now add turmeric powder,coriander powder,salt and mix well.
Add masala powder and fry for 1minute.
Add 1 and 1/2 cup water and let it boil for 3 to 4 minutes.
Add fried capsicum pieces cook for another 3 to 4 minutes.
Turn off the heat and serve with chapati,paratha or rice.
Enjoy!!!
Note:
Don't over fry capsicum.
you can add kasoori methi and garam masala for more flavor.

Capsicum and Soya chunks Curry(Green Pepper with Nutrela)

We all know Nutrela are rich in proteins and peas and capsicum are packed with nutrients and vitamins. I prepared this  simple yet very tasty and something different combination. this quick and tasty curry goes well with chapati.Try this healthy and easy recipe for yourself and enjoy!!!


Ingredients:
  • Capsicum-2 (cut into cubes)
  • Nutrela(soya chunks)-1cup
  • Green peas-1/2 cup( I used frozen)
  • Onion-1choppedGreen chilli-2chopped
  • Curd -2tbsp
  • Ginger garlic past-2tsp
  • Hing-pinch
  • Cumin seed -1/4tsp
  • Turmeric powder-1/4 tsp
  • Coriander powde-1/2 tsp
  • Red chilli powder-1/4tsp
  • Salt - to taste
  • Oil-1tbsp
How to prepare:
Soak Nutrela in warm water for 15 minutes.
Heat oil in pan add cumin seed when they start splutter, add hing saute for seconds.
Add onion and saute until golden brown in color. Add ginger garlic paste and green chilli
fry until raw smell goes away. Add curd ,turmeric powder,red chilli powder ,coriander powder and salt cook for 2-3 minutes or till oil separates.Add capsicum,peas and soaked soya chunks and mix well. Add 1&1/2 cup of water and simmer for 8 to 10 minutes. Turn off the heat.
Garnish with coriander leaves .
Serve hot with chapati.

Kadahi Bhindi


Ingredients:
  •  Bhindi(okra)-3 cups(washed, Dry and cut into 1inch pieces )
  • Green, Red, yellow capcicum-1 cup (cut into cubes)
  • Onion- 2(cut into cubes)
  • Tomato-2(cut into cube)
  • Ginger garlic paste-2tsp
  • Cumin seed-1tsp
  • Coriander powder-2tsp
  • Coriander seed (crushed)-1tsp
  • Turmeric powder -1/2 tsp
  • Red Chilli powder-1/2tsp
  • Whole red Chilli-2
  • Green Chilli-2 (chopped)
  • Garam masala-1tsp (optional)
  • Coriander leaves-for garnishing
  • Salt- to taste
  • Oil- for deep frying and for curry (3tsp)
Method:
Deep fry the okra till the stickiness goes off or it should retain nice green color so don’t over fry.
Drain it on a paper towel.
Deep fry the capsicum in same oil until done, keep aside.
Heat oil in a wide pan add cumin seed when they crackle add crushed coriander seed
Saute them for few seconds add whole red Chilli, green Chilli, and onion saute till they transparent.
Add ginger garlic paste fry till raw smell goes away, add tomatoes, fry them until little soft.
Now add turmeric powder, red Chilli powder, coriander powder, garam masala, salt mix it
Properly,when the masalas are well blended, add fried  bhindi and capsicum in it mix everything 
again,cook for another 5 to 6 minutes. turn off the heat.garnish with coriander leaves.
serve hot with chapati or naan.

Cabbage Capsicum & Peas Curry


Cabbage is very nutritious vegetable and capsicum is great for metabolism.so try this
simple and Healthy dish with unique and delicious flavor. This curry goes well with paratha
Or chapatti.
Ingredients:
  • Cabbage-1cup(shredded)
  • Capsicum(green pepper)-1/2cup (chopped)
  • Peas-1/4cup
  • Turmeric powder-1/4tsp
  • Coriander Powder-1/2tsp
  • Green chilli -2 chopped
  • Hing(asafetida)-a pinch
  • Oil-1tbsp
  • salt-to taste
  • Cumin seed-1/4tsp
  • Mustard Seed-1/4 tsp

Method:
Heat oil in pan add cumin and mustard seed when they start pop add green chilli and
hing saute for few seconds add cabbage,capsicum and peas mix everything well.
Add Turmeric powder,coriander powder and salt mix properly,cover it and cook
on medium flame till vegetables are done.turn off the heat.
Garnish with coriander leaves. serve hot with chapati or paratha.

Cabbage Capsicum Rice

This is very tasty and flavorful rice recipe. It takes very less time to prepare and tastes too good.Healthy one pot meal relished with any raita or curd.



Ingredients:
  • Cooked Rice-2cup
  • Capsicum-1cup( all colors cut it into lengthwise)
  • Cabbage-1cup(finely chopped)
  • Ginger garlic paste-1tbsp
  • Cumin Seed-1/4tsp
  • Black Pepper-6-7
  • Green chilli-2(finely chopped)
  • coriander leaves- for garnishing
  • Oil-1tbsp
  • salt to taste
Preparation:

Heat oil in pan add cumin and black pepper sauté for few seconds.

Add green Chilli and ginger garlic paste cook till raw smell goes.

Add chopped cabbage and capsicum sauté for 4 to 5 minutes.Don't over cook.

Add salt and cook for another 1 minute.

Now add cooked rice mix properly. Turn off the heat.

Garnish with coriander leaves.

Enjoy your healthy rice with curd or raita.

 Note:You can also add onions for more flavor.

Capsicum Curry (Simple Green pepper Curry)

This curry can be used as a side dish. It is very tasty and easy to prepare. Goes well As a side dish with rice and rotis.
Ingredients:
  • Capsicum (green pepper)-2cut it into cube
  • Onion -1finely chopped
  • Ginger garlic paste-1tsp
  • Cumin seed-1/2tsp
  • Mustard seed-1/4tsp
  • Turmeric powder-1/4tsp
  • Coriander powder-1/2tsp
  • Green Chilli-2finely chopped
  • Coconut powder (shredded)-2tbsp
  • Oil-3tsp
  • Salt-to taste
  • Coriander leaves-for garnishing
Preparation:
Heat oil in pan add mustard seed and cumin seed when they start splutter add
Onion sauté till very little brown add ginger garlic paste when raw smells goes add
Turmeric powder coriander powder sauté for few seconds add capsicum and salt.
Mix it properly. Cook for 5 to 6 minutes on medium flame or capsicum is tender.
Now add coconut stir properly. Cook for 2 to 3 minutes.
Turn off the heat. Finally garnish with chopped coriander leaves.
Enjoy your quick and healthy side dish with rice or chapati.
