Bhindi/Okra with Coconut and Corainder

This is one of very easy and delicious dry curry .I use coconut, coriander and red chili to makes curry
More flavorful and tasty.I hope you will try this simple and delicious bhindi.



Ingredients:
  • Bhindi- 1/2 lb ( washed and wiped and cut it into rounds)
  • Coconut dry(grated)-1/2 cup
  • Coriander seeds-1 tbsp
  • Red chili(whole) - 1-2
  • Cumin seed- 1/2 tsp
  • Onion - 1(chopped)
  • Hing- a pinch
  • Turmeric powder-1/2 tsp
  • Salt to taste
  • Oil-1 tbsp
  • Coriander leaves for garnishing


Method:
First dry roast coriander,coconut and red chili.
Let them cool and grind to a coarse powder into mixer.
Heat oil in a pan add cumin seed, when they crackle add hing
And onion fry for 2 to 3 minutes.
Now add turmeric powder, and mix well add bhindi mix everything nicely.
Cover and cook on medium heat till bhindi turns light browned in color.
Keep stirring in between while it is getting cooked.
Add grounded coconut and Coriander ,red chili and mix well.
Cover and cook for another 2 to 3 minutes.
Turn off the heat and garnish with coriander leaves and grated coconut.

Green chili and Garlic Chtuney

Today i am going to share very spice and flavorful chutney recipe,This chutney is typically from Maharashtra, traditionally made in mortar and pestle(ओखली या खलबट्टा )  but i  made in mini chopper(food processor) it tastes really good,try it out and enjoy!!!

Ingredients:
  • Green chili-10-12(roughly chopped)
  • Garlic clove-8-10
  • Coriander Leaves-1cup(roughly chopped)
  • Cumin seed-1tsp
  • Oil-1/2 tbsp                                                             
  • Salt- to taste


Method:
Heat oil in a pan add cumin seed and when they crackle add chili
and garlic saute for 1 minute, then add chopped coriander leaves.
Add salt and give a nice stir,cover and cook for 2 to 3 minutes on medium
heat.turn off the heat and let it cool.
Transfer to a food processor and make a coarse paste.
Note:
keep in airtight container in the refrigerator for up to 2 weeks.

Coconut Mint Chutney

It is very easy, simple yet delicious chutney goes well with dosa,idli and vada.
Prep time: 5 minutes!
cook time-5 minutes!
serves-4
Recipe type-chutney
Cuisine -South Indian
Ingredients:
Coconut-1cup(fresh or grated)
Mint leaves-1/2cup( washed and chopped)
Fried Chana dal-2tbsp
Green chili-2 (chopped)
Coriander leaves-1/4cup(washed and chopped)
Salt-to taste 
To Tamper:
Oil-1tsp
Hing(asafieda)-pinch
Curry leaves-few
Mustard Seed-1/4tsp
Whole Red chilli-1
Method:
Add all the ingredients coriander,coconut, mint ,green chili, Chana dal
With very little water into grinder,to make smooth paste.
Heat oil in pan add mustard seed and let them splutter, now add
Curry leaves,whole red chili and hing stir for few seconds.
Pour this to the chutney. Mix properly and serve with idli,dosa or vada.

Mint Rice with Coriander (Pudina Chawal with Dhaniya)

This rice is a combination of coriander and mint ,it is very easy to make,Tasty and the aroma makes you want more and it will best one pot meal. Serve with Any Raita and pickle. Lets start how to make this simple yet tasty rice dish.
Ingredients:
  • Rice-1cup
  • Mint leaves-1cup(roughly chopped)
  • Coriander -1cup
  • Green chillies-2-3( as per your taste)
  • Ginger garlic paste-1tbsp
  • Salt- to taste
  • Cumin seeds-1/2tsp
  • Oil-1tbsp
How to prepare :
Cook the rice and allow the cooked rice to get cool.
Grind mint leaves along with coriander and green chillies to a paste.
Heat oil in a pan add cumin seed and sauté for seconds Add ginger garlic paste till raw
smell goes,add ground paste and salt,,To the pan fry for 2-3 minutes until it turns fragrant.
turn off the heat. Add the rice and mix properly without breaking much.
Enjoy with any raita or pickle.

Green chutney for chaat (Mint Coriander Chutney)

There are many ways to prepare green chutney, But coriander and mint is base for this chutney. This is so simple and easy to make.You can use this chutney for all chat item like bhel,Panipuri, dahivada aloo chat and so on.it can be also used as sandwich spread too.  And it Can be stored for at least 3 to 4 days in the fridge.

Ingredients:  
  • Coriander-1Bunch
  • Mint (pudina)-1/2Bunch
  • Cumin Seed-1/4tsp
  • Lemon juice-1tbsp
  • Salt-to taste
  • Green Chilli-4 (to taste)
  • Ginger (grated)-1/2tsp

Method:
Wash coriander and mint leaves and roughly chopped.
Add green Chilli, cumin seed, ginger and salt into mixer,make coarse
Paste, now squeeze the lemon juice. Grind it again to make smooth
Paste adding a little water.
your green chutney is ready!!!
Note:
you can  adjust green chilli and lemon juice as per your taste!!!
