Happy Independence Day to All. I am back in blogging after long break. we had great time in
india, I missed so many delicious recipes from everyone's blog. I"ll be regular now.Thank you so much for all your comments and supports. Lauki ki kheer is very healthy and very tasty dessert made with bottle gourd.Bottle gourd is very common veggie in india, it is also known as lauki or dudhi in hindi,lau in Bengali.Sorakaya in Telgu, bhopala in Marathi, sorekayi in Kannada and suraikkai in Tamil.This veggie is very low in fat and cholesterol yet high in fibre.Try out this sweet !!!
Ingredients:
Heat ghee in pan. Fry grated lauki till water has evaporated.
Heat milk and bring it to boil,reduce the heat to medium and boil for 10 -12 minutes,stirring occasionally.
Now add grated lauki into milk and stir the kheer in every 2 minutes.Cook on low heat for 8 to 10 minutes.Add sugar, cook on low heat till lauki and milk mixed properly.
Simmer for another 5 minutes.Turn for the heat add cardamom powder,saffron, and almonds pieces.
Mix everything nicely. Lauki ki kheer is ready to serve.
You can serve hot or cold as per choice.

Note:
you can substitute with carrot instead of lauki.

- Milk-5cup
- Sugar-1/2cup
- Almonds pieces-1tsp
- Green cardamoms powder-1/4tsp
- Ghee-2tbsp
- Saffron(kesar)-7-8 strands(optional)
