Homemade whipped Cream

When I saw this recipe in Nishamadhulika since then I never bought whipped cream from store.
It is very easy to make at home and need only two ingredients.It's really simple and not only is it
Cheaper and its better then store bought. You can make with different flavor like mango,vanilla
Strawberry and chocolate etc.

















Ingredients:
  • Heavy cream-1 cup( chilled)
  • Sugar-2 tbsp( to taste )
Method:
Pour the cream in the bowl and and whisk on medium speed
Then increase the speed to high, after whipping couple of minutes
Add sugar whisk until the cream become more solid and thick.
It takes about 10 to 12 minutes.Use as needed.
Enjoy!!!
Note:
Do not over whip otherwise you'll make butter.
You can use hand whisk the times will likely be longer.

Basundi

I want to wish all my family members,friends and fellow blogger friends a very happy and colorful
Holi.
Today I am going to share a very rich and thick sweet treat from Maharashtra and Gujarat.
Basundi making is time consuming process, it took me almost 40 to 45 minutes,but it is completely
Worth to try and final result is amazing.



Ingredients:
  • Milk- 4 cups
  • Sugar-1/4 cup
  • Almonds-10-12(chopped)
  • Cashews -10-12( chopped)
  • Cardamom powder-1/4 tsp
  • Saffron-15-20 strands


Method:
Place a heavy bottomed pan on medium heat,add milk and bring it to a boil.
Lower the heat and cook, stirring frequently.
Take 2 tbsp boiled milk and put the saffron strands.keep them aside.
Keep stirring  and reduce it till it becomes thick.
Add the sugar and stir until it is dissolved.Add saffron milk and Simmer for another 6 to 8 minutes.
Add cardamom powder and chopped nuts. Turn off the heat and serve warm or chilled.
Enjoy!!!
Note:
You can adjust the sugar quantity as per your taste.
Do not forget to stir frequently,otherwise it will burn from bottom.
Make sure basundi is not too thick because when its get cold it will become thicker.

Til ki barfi using Milk Powder

Another recipe of milk powder with sesame seeds. I found this recipe in  Manjula's Kitchen It is very simple,easy to prepare with less ingredients and in very less time.Tomorrow is Maha shivrartri so this is perfect sweet option for fasting days.


Ingredients:
  • Til(sesame seeds)-1 cup
  • Milk powder-1cup
  • Sugar-1/2 cup
  • Heavy cream-1 cup
  • Almonds for garnishing
  • Cardamom powder-1/4 tsp


Method:
Dry roast sesame seeds in a heavy bottomed pan on medium heat until they turn
Little golden color.Transfer roasted seeds in a plate.
In same pan add heavy cream and milk powder and cook on medium heat,till
Mixture is turned to thick paste and binding together.Don't forget to stirring continsully.
Add roasted sesame seeds and mix it thoroughly.Stir for 1 to 2 minutes.
Now add sugar and cardamom powder and mix well.
Keep stirring for 2 to 3 mintutes or till the mixture combine together.
Spread the mixture evenly into greased plate. Let it sit for 1 to 1/2 hours.
Original recipe called for 2 hours so depend on the temperature of place.
Cut pieces into desired shape. Put the almonds on center of barfi and
Press slightly.Keep in an airtight container for upto 2 weeks.

Shahi Tukda

Shahi Tukda is very famous bread pudding from Hyderabadi cuisine,it is made from milk and bread,saffron,nuts and cardamom flavor. I have cut the bread into heart shape because i made this on valentine day but couldn't post you can cut any shape of your choice.


Ingredients:
  • Bread slices- 6
  • Milk -3 cup                                                        
  • Ghee-3tbsp
  • Sugar- 1 &1/2 cup
  • Water- 1 cup
  • Saffron -1/4 tsp
  • Cardmom powder-1/4 tsp
  • Almonds few - chopped
  • Cashew few-chopped

Method:
Heat milk in a thick bottomed pan and bring to boil,once it is start boiling
Reduce the heat and boil the milk thicken,add 1/2 cup sugar,cardamom powder
and saffron.Boil for another 6 to 8 minutes making sure stirring occasionally so milk
does not burn in bottom of the pan.In another pan dissolve one 1 cup sugar and 1cup water.
cook for 5 to 6 minutes and keep aside.
cut the bread into desired shape like heart shape, circle,triangle or square.
Heat ghee in a pan and shallow fry bread slices till they golden brown from both sides.
Dip the bread into sugar syrup for 2 to 3 minutes.
place soaked bread into serving plate pour rabri on over.
Garnish with chopped almonds and cashews.
Serve chilled or warm.

Coconut Ladoo with Milkpowder(Instant Coconut Ladoo)

Today i am going to share very easy,quick and no cooking coconut ladoo and it can be made in a jiffy
With few ingredients,I came across this healthy and delicious recipe from cookery show on NDTV. if you have all the ingredients you can make this sweet treat  for Diwali.
Ingredients:
  • Coconut(desiccated) powder-1cup
  • Milk powder-1cup
  • Sugar powder-3/4 cup
  • Milk(warm milk)-3-4 tbsp
  • Green cardamom powder-1/4 tsp
Method:
In mixing bowl add coconut powder, milk powder, sugar powder
Mix well,now add warm milk and cardamom powder, knead it in the
Form of dough.spread some coconut on plate for rolling ladoos.
Take small portion and shape them  into small ball.Roll Ladoos on
Coconut plate. store in an airtight container.
Isn't is so easy and quick...
