Instant Corn Dhokla

Who will say no to this instant corn dhokla because it is very nutritious,healthy and it has lots of fiver and very unique taste and they are really easy to make  as well as it doesn't need any fermentation. 
 

Ingredients:
  • Corn-1 cup ( I used frozen)
  • Rava(suji)-1 cup
  • Curd- 1/2 cup
  • Ginger and green chili paste- 1tsp
  • Fruit salt(eno powder)- 1tsp      
  • Lemon juice-1 tbsp
  • Salt to taste
 For temper:                            
  • Oil -1/2 tbsp
  • Mustard seed - 1 tsp
  • Green chili- 2
  • Hing( asafetida)-a pinch
For garnishing:
  • Coriander leaves, grated coconut


Method:
Take rava and curd in a mixing bowl and mix it well.
put corn seed in a mixer and blend it till smooth.
Add corn paste into rava and curd mixture,mix properly.
Now add ginger and green chili paste,salt,lemon juice
Mix everything nicely.grease the plate with some oil.
Heat 2 cups of water in a  deep wide pan and cover and let the water start boiling.
Just before steaming add fruit salt and  mix gently.
Immediately pour the mixture into greased deep plate.
Steam for 15 to 20 minutes or until a toothpick inserted in the center of the
Dhokla comes out clean.
Remove the plate and keep aside to cool slightly.cut it into squares.
Heat oil in a pan add mustard seed, green chili,and hing
When the seeds start to crackle, turn off the heat.
Pour over the dhoklas and garnish with chopped coriander and grated coconut.
Serve with Green chutney and Tamarind Chutney.

Masala peanuts in Microwave

Masala peanut is very popular snack or starter. It's usually deep fried but when I find this in tarla Dalal's site and immediately tried ,believe me it just like deep fried ones.You can prepare this crunchy masala in less than 10 minutes.so try out this crispy,crunchy and healthy version of snack.


Ingredients:
  • Raw peanuts-1 cup
  • Besan (gram flour)-1 cup
  • Turmeric powder-1/4tsp
  • Chat masala -1/2 tsp
  • Red chilli powder-1/2tsp
  • Coriander powder -1/4tsp
  • Amchur powder-1/2tsp
  • Hing(asafoetida)-a pinch
  • Oil-1tbsp
Method:
Mix all the dry ingredients and besan,mix well.
Wash peanuts and immediately drain the water. Now add wet peanuts
In gram flour mixture and mix well.add 2tbsp water little by little and mix well.
Add oil to this and mix well again, peanut should be coated well with mixture.
Take microwave safe plate and spread the peanuts evenly.
Microwave them for 2 to 3 minutes. Mix peanuts with fork or spoon for even roasting.
Take out the plate and microwave for 1 more Minutes and repeat the process till peanuts are done.
cool completely and store in airtight container.
Enjoy!!! 
Note:
Cooking time may differs from microwave to microwave.
So keep an eye on them.
Do it in small batches.

Shakkarpare(Easy Diwali Snack)

Deepawali is around the corner, everybody is busy with preparation, shakkpare is one of snack which is made during diwali for snacks, it is mild sweet crackers and melts in mouth and it doesn't need much ingredients and best thing about this you can make this snack in advance because it can be stored for couple of weeks.

Ingredients:
  • All purpose flour-2cups
  • Sugar-1/2cup
  • Ghee-1/4cup
  • Oil for deep frying

How to prepare:
put the flour and sugar in a mixing bowl.
add ghee in flour mixture,mix properly with hand.
add little amount of water,knead into a firm dough.
cover the dough and keep aside for 10 minutes.
knead the dough again and divide it into equal and smooth balls.
grease the surface and rolling pin with little oil.
roll out into thick chapati,prick the chapati with fork.
using a knife or cookie cutter,cut the circle into diamonds or square shape.
keep them on plate and cover with  dry cloth.
Heat oil into kadahi or deep wok on slow to medium heat,add diamonds and fry until
golden brown.drain on paper towel.let cool completely and store in air tight
container. serve with hot cup of tea.

Note:
you can replace all purpose flour with whole wheat flour(aata) to make it more healthy.

Corn Boondi Bhel

Bored with regular bhel try this healthy,quick and spicy mouthwatering bhel.  
Ingredients:
  • Corn kernels-1cup(boiled & drained)
  • Spicy boondi-1cup
  • khatti Meethi chutney(Tamarind chutney)-2tbsp
  • Green chutney -1tbsp
  • Sev-1/2cup
  • Onion-1(finely chopped)
  • Tomato-1(finely chopped)
  • Chat Masala-1tsp(To Taste)
  • Green Chilli-2(finely Chopped)
  • Coriander Leaves-for garnishing  
  • Sendha namak (black Salt)-to taste
How to Prepare: 
Take one large mixing bowl add corn,onion,tomato,chilli,chat masala
then add boondi,sev, both chutneys,coriander leaves,salt and mix well everything.
serve immediately.

palak ke Muthiya

Muthiya is steamed dumpling common Gujarati dish,which is very healthy and tasty savory snack.It can be made with cabbage, methi, bottle gourd or any other veggies of your choice.


Ingredients:
  • palak(spinach) finely chopped-2cups
  • Wheat Flour-1cup
  • Besan(gram flour)-1/2 cup
  • Rava(semolina)-1/2 cup
  • Turmeric powder-1/2tsp
  • Coriander leaves-1tbsp
  • Ginger(grated)-1tsp
  • Turmeric Powder-1/2tsp
  • chilli powder-1/2tsp
  • Oil-1tsp
  • Salt to Taste
Tempering/Tadka
  • Oil-1tsp
  • Mustard seed-1/2tsp
  • Sesame seeds-1tbsp
  • Asafetitda(Hing)-pinch 
  • Coconut-for garnishing
  • Coriander leaves-for garnishing
Preparation:
Take besan,semolina,aata and spinach and other ingredients
in mixing bowl and mix well and make a smooth soft dough with the  help of little water.
Grease palm with some oil make rolls from the dough.  
Make Rolls as shown in the picture.
Place the rolls on greased sieve and steam in a steamer for 15 -20 minutes.
if the muthias are done, insert a toothpick in the centre. If it comes out clean, the muthias are cooked.
Let them cool and cut it into ½ inch thick slices.
Heat oil in pan adds mustard seed when they start crackle add sesame seed and asafetida.
Add sliced muthiya and mix it well. Turn off the heat and garnish with
chopped coriander leaves and grated coconut.
Enjoy this healthy snack  with green chutney or tomato ketchup
