Shakkarpare(Easy Diwali Snack)

Deepawali is around the corner, everybody is busy with preparation, shakkpare is one of snack which is made during diwali for snacks, it is mild sweet crackers and melts in mouth and it doesn't need much ingredients and best thing about this you can make this snack in advance because it can be stored for couple of weeks.

Ingredients:
  • All purpose flour-2cups
  • Sugar-1/2cup
  • Ghee-1/4cup
  • Oil for deep frying

How to prepare:
put the flour and sugar in a mixing bowl.
add ghee in flour mixture,mix properly with hand.
add little amount of water,knead into a firm dough.
cover the dough and keep aside for 10 minutes.
knead the dough again and divide it into equal and smooth balls.
grease the surface and rolling pin with little oil.
roll out into thick chapati,prick the chapati with fork.
using a knife or cookie cutter,cut the circle into diamonds or square shape.
keep them on plate and cover with  dry cloth.
Heat oil into kadahi or deep wok on slow to medium heat,add diamonds and fry until
golden brown.drain on paper towel.let cool completely and store in air tight
container. serve with hot cup of tea.

Note:
you can replace all purpose flour with whole wheat flour(aata) to make it more healthy.

Boondi Ladoo

Boondi ladoo is very special Indian sweet dish make for festival . It’s an all-time favorite sweet. Making boondi is little time consuming, but it takes just little patient, I'm Sure you will enjoy making these.
Ingredients:
For boondi:
  • Besa(gram flour)-1cup
  • Water-one and half cup
  • Orange or yellow color-a pinch (optional)
For sugar syrup:
  • Sugar-one and half cup
  • Water-1cup
  • Cardamom powder-1/4tsp
Other ingredients:
  • Cashew, almond and pistachio-broken pieces
  • Oil or ghee for frying
Preparation:
In a big bowl take besan, color and water. Mix properly until there are no lumps.
The batter should be dosa batter consistency. Keep aside.
Heat 1tsp ghee in a pan; fry the cashew, almonds and pistachio till golden brown.
Mix sugar and water let it boil till reaches 1/2 thread consistency. Syrup should be sticky between the fingers. Add cardamom powder and keep aside.
Heat ghee in deep pan on medium heat; take a spoonful of batter pour onto a boondi maker or perforated ladle, tap it gently with the back of the spoon so that boondi falls into the oil.
Fry them till they stop sizzling and until golden brown. Place them directly into the sugar syrup.
Repeat till all the batter is used up.
Add almonds, cashew and pistachios pieces, mix everything properly.
Let them soak for 15-20 minutes.
Make ladoo with moist hand.
