Basundi

I want to wish all my family members,friends and fellow blogger friends a very happy and colorful
Holi.
Today I am going to share a very rich and thick sweet treat from Maharashtra and Gujarat.
Basundi making is time consuming process, it took me almost 40 to 45 minutes,but it is completely
Worth to try and final result is amazing.



Ingredients:
  • Milk- 4 cups
  • Sugar-1/4 cup
  • Almonds-10-12(chopped)
  • Cashews -10-12( chopped)
  • Cardamom powder-1/4 tsp
  • Saffron-15-20 strands


Method:
Place a heavy bottomed pan on medium heat,add milk and bring it to a boil.
Lower the heat and cook, stirring frequently.
Take 2 tbsp boiled milk and put the saffron strands.keep them aside.
Keep stirring  and reduce it till it becomes thick.
Add the sugar and stir until it is dissolved.Add saffron milk and Simmer for another 6 to 8 minutes.
Add cardamom powder and chopped nuts. Turn off the heat and serve warm or chilled.
Enjoy!!!
Note:
You can adjust the sugar quantity as per your taste.
Do not forget to stir frequently,otherwise it will burn from bottom.
Make sure basundi is not too thick because when its get cold it will become thicker.

Til ki barfi using Milk Powder

Another recipe of milk powder with sesame seeds. I found this recipe in  Manjula's Kitchen It is very simple,easy to prepare with less ingredients and in very less time.Tomorrow is Maha shivrartri so this is perfect sweet option for fasting days.


Ingredients:
  • Til(sesame seeds)-1 cup
  • Milk powder-1cup
  • Sugar-1/2 cup
  • Heavy cream-1 cup
  • Almonds for garnishing
  • Cardamom powder-1/4 tsp


Method:
Dry roast sesame seeds in a heavy bottomed pan on medium heat until they turn
Little golden color.Transfer roasted seeds in a plate.
In same pan add heavy cream and milk powder and cook on medium heat,till
Mixture is turned to thick paste and binding together.Don't forget to stirring continsully.
Add roasted sesame seeds and mix it thoroughly.Stir for 1 to 2 minutes.
Now add sugar and cardamom powder and mix well.
Keep stirring for 2 to 3 mintutes or till the mixture combine together.
Spread the mixture evenly into greased plate. Let it sit for 1 to 1/2 hours.
Original recipe called for 2 hours so depend on the temperature of place.
Cut pieces into desired shape. Put the almonds on center of barfi and
Press slightly.Keep in an airtight container for upto 2 weeks.

Til Chikki

Wishing you all a very happy makar sankranti,pongal,and lohri. Try this easy to make and healthy sweet snack.


Ingredients:
  • Til(sesame seed)-1 cup
  • Gud(jaggery)-1cup
  • Ghee- 1 tsp



Method:
Heat heavy bottomed pan  and roast sesame seed till they are lightly golden brown.
Transfer into bowl and keep aside.
Heat ghee in same pan and add gud,keep stirring continuously on medium heat.
Till the gud melts.
Meanwhile grease the flat plate and rolling pin(belan) with some ghee.
Add roasted til in gud syrup and mix properly.
Turn off the heat and immediately pour the mixture into greased plate.
Roll it with greased rolling pin as thin as you can.
Cut and make shapes with knife while its still hot.
Allow it Cool for 10 to 15 minutes.
Separate the pieces and store an airtight container.

Coconut Ladoo with Milkpowder(Instant Coconut Ladoo)

Today i am going to share very easy,quick and no cooking coconut ladoo and it can be made in a jiffy
With few ingredients,I came across this healthy and delicious recipe from cookery show on NDTV. if you have all the ingredients you can make this sweet treat  for Diwali.
Ingredients:
  • Coconut(desiccated) powder-1cup
  • Milk powder-1cup
  • Sugar powder-3/4 cup
  • Milk(warm milk)-3-4 tbsp
  • Green cardamom powder-1/4 tsp
Method:
In mixing bowl add coconut powder, milk powder, sugar powder
Mix well,now add warm milk and cardamom powder, knead it in the
Form of dough.spread some coconut on plate for rolling ladoos.
Take small portion and shape them  into small ball.Roll Ladoos on
Coconut plate. store in an airtight container.
Isn't is so easy and quick...

Beetroot Barfi(Chukander ki Barfi)

I made this beetroot barfi on navratri and its turned out so delicious.This is one of very delicious,healthy and nutritious barfis are very easy to make and tasty to eat.So do try it when you get a chance.

Ingredients:
  • Beetroot-2cups(peeled &grated)
  • Mawa-1/2cup
  • Sugar-1/2cup
  • Ghee-1tbsp
  • Green cardamom powder-1/4tsp
  • Almonds-7-8(chopped)
How to prepare:
Heat ghee in a pan and add grated beetroot and cook till it gets soft.
add sugar and mix well, stir occasionally,cook until mixture turn thick.
add mava and cook on medium heat till mixture turn completely dry.
add cardamom powder ,mix well and turn off the heat.
pour this mixture on greased plate.spread evenly and garnish with chopped
almonds.slightly pressed them and let it cool then keep in refrigerator for 1 or 2 hours.
Cut it into desired shape.
Enjoy!!!!
Note:
You can add milk powder too if you don't have mava.
You can add other dry fruits also.

Rava and Coconut Laddu

This rava and coconut laddu is my family's favorite, so i prepared it very often. it made with  roasted rava,coconut and sugar syrup .it is very easy to prepare and at the same time most delicious laddu that one can ever relish.Navratri,Dushera and Diwali is around the corner,so give this laddu a try. you cannot go wrong with this.

Ingredients:
  • Rava(suji)-2cups
  • Coconut(grated)-1cup
  • Sugar-11/2 cup
  • Ghee-1/2cup
  • Water-3/4 cup water
  • Raisin-for garnising
  • Cardamom powder-1/4tsp

How to prepare:
Melt the ghee in heavy bottomed pan roast the rava till get golden brown or get nice roasted aroma.
Keep aside. In that Same pan dry roast coconut on medium heat for 2 minutes. Keep with roasted rava. Take sugar and water into pan, boil and allow the mixture to simmer until it getsClose to single thread consistency. Turn off the heat add roasted rava,coconut,raisin,and cardamom Powder, mix well everything properly. After few minutes when mixture can be handled,Grease your palm with ghee take small amount of mixture roll it into Laddu. Let them cool completely and keep in airtight container.
Makes approxmatily 22 to 24 laddus.

Note :
If you are not able to make Laddu or mixture becomes little dry, you may sprinkle some milk.

Besan Ladoo In Microwave

Happy Ganesha Chathurthi to All. Besan Ladoo prepared during all festivals and auspicious occasions.it is impossible to think of any Indian festival or celebration without sweets.I used boora in this recipe instead of powder sugar..if you want to know How to make Tagar or Boora click here. it is very easy and simple process to make boora.I made these Ladoo in microwave it is very quick and easy, you do not have keep stirring. Lets start how to prepare this easy and tasty ladoos.
Ingredients:
  • Besan(gram flour)-2cup
  • Boora-1cup
  • Ghee-3/4cup
  • Cardamom powder-1tsp
  • Almonds chopped-1tbsp
  • Raisin-few
How to prepare:
Take ghee in microwave safe bowl and microwave for 30 seconds.
Mix besan with melted ghee and microwave for 2 minutes.
Take out the bowl from microwave mix nicely again.
Microwave again for one minutes.keep checking and stirring after 1 minute.
In 6-7 minutes besan should be a light brown in color and with nice aroma.
Allow it cool completely. Then add boora ,cardamom powder,almonds pieces
And raisins. Mix everything properly and make round Ladoos of your size.

Note:
you can use sugar powder too.

Gajar ki Barfi (Carrot Barfi)

I prepared this easiest and the yummiest barfi on rakhi.Enjoy this healthier dessert gajar ki barfi on Rakhsha Bandhan with your family. Happy Rakhsha Bandhan to all.
Ingredients:
  • Grated carrot-2 cups
  • Sugar-1/2 cup
  • Water-1/4 cup
  • Ghee-4 tbsp.
  • Cardamom powder- 1/2tsp
  • Raisin-5-6
  • Cashew-5
  • Almond-5
preparation:
Fry the cashews and almonds with little ghee and keep aside.
Heat ghee in a heavy bottomed pan
Fry grated carrot with ghee and stir till all the water evaporates from it.
Meanwhile take heavy bottomed pan add sugar and water mix well till sugar
Dissolves completely and cook till a one string consistency.
Now in this stage add carrot into, mix it well.
Keep stirring continuously till the mixture leaves side of the pan.
When it Starts bind together, finally it becomes like dough.
Now add cardamom powder mix it well.
Pour on greased plate and spread it evenly.
Sprinkle the almonds, cashew and raisin on top and press gently.
Leave it to set it for some time.When it set firmly. Cut it into desired shape.
Enjoy your carrot Burfi!!

Lauki ki kheer (Bottle gourd pudding)

Happy Independence Day to All. I am back in blogging after long break. we had great time in 
india, I missed so many delicious recipes from everyone's blog. I"ll be regular now.Thank you so much for all your comments and supports. Lauki ki kheer is very healthy and very tasty dessert made  with bottle gourd.Bottle gourd is very common veggie in india, it is also known as lauki or dudhi in hindi,lau in Bengali.Sorakaya in Telgu, bhopala in Marathi, sorekayi in Kannada and suraikkai in Tamil.This veggie is very low in fat and cholesterol yet high in fibre.Try out this sweet !!!


Ingredients:
  • Grated lauki-2cups
  • Milk-5cup
  • Sugar-1/2cup
  • Almonds pieces-1tsp
  • Green cardamoms powder-1/4tsp
  • Ghee-2tbsp
  • Saffron(kesar)-7-8 strands(optional)
How to prepare:
Heat ghee in pan. Fry grated lauki till water has evaporated.
Heat milk and bring it to boil,reduce the heat to medium and boil for 10 -12 minutes,stirring occasionally.
Now add grated lauki into milk and stir the kheer in every 2 minutes.Cook on low heat for 8 to 10 minutes.Add sugar, cook on low heat till lauki and milk mixed properly.
Simmer for another 5 minutes.Turn for the heat add cardamom powder,saffron, and  almonds pieces.
Mix everything nicely. Lauki ki kheer is ready to serve.
You can serve hot or cold as per choice.

you can substitute with carrot instead of lauki.

Boondi Ladoo

Boondi ladoo is very special Indian sweet dish make for festival . It’s an all-time favorite sweet. Making boondi is little time consuming, but it takes just little patient, I'm Sure you will enjoy making these.
Ingredients:
For boondi:
  • Besa(gram flour)-1cup
  • Water-one and half cup
  • Orange or yellow color-a pinch (optional)
For sugar syrup:
  • Sugar-one and half cup
  • Water-1cup
  • Cardamom powder-1/4tsp
Other ingredients:
  • Cashew, almond and pistachio-broken pieces
  • Oil or ghee for frying
Preparation:
In a big bowl take besan, color and water. Mix properly until there are no lumps.
The batter should be dosa batter consistency. Keep aside.
Heat 1tsp ghee in a pan; fry the cashew, almonds and pistachio till golden brown.
Mix sugar and water let it boil till reaches 1/2 thread consistency. Syrup should be sticky between the fingers. Add cardamom powder and keep aside.
Heat ghee in deep pan on medium heat; take a spoonful of batter pour onto a boondi maker or perforated ladle, tap it gently with the back of the spoon so that boondi falls into the oil.
Fry them till they stop sizzling and until golden brown. Place them directly into the sugar syrup.
Repeat till all the batter is used up.
Add almonds, cashew and pistachios pieces, mix everything properly.
Let them soak for 15-20 minutes.
Make ladoo with moist hand.
