Eggless Custard Powder Cake

This is the perfect cake for beginner baker like me and avoid to eggs in baking ,it is very moist,soft
And perfect snack time cake.
(Adapted from Best Recipes)



Ingredients:
  • All purpose flour(maida)-1 and 1/ 2 cups
  • Custard powder-3/4 cup                                    
  • Granulated sugar -3/4 cu
  • Baking powder-1 and 1/4 tsp
  • Vanila extract-1/2 tsp
  • Butter-150 gm at room temperature
  • Milk - 1 cup





Method:
Sieve all the dry ingredients into big bowl and mix well.
Add the milk,butter and  mix until you get a smooth batter.
Preheat the oven  at 350F and bake for 40 to 45 minutes
Or cake is done by inserting a toothpick in the middle of the
Cake comes out clean.
Let it cool completely and serve.
Note:
Baking time may vary depending on your oven and cake pan.

Eggless Zebra Cake/1st Happy Blog Anniversary


Hello Friends,
Last month my blog has completed its 1st year.I still can't believe that its been an year already since I started this blog,never thought I Could be able to achieve this milestone.I want to thank you each and everyone for support and encouragement.I hope your comments and kind words keep motivating me.
I want to celebrate this moment with this yummy and very easy to make cake recipe. I have seen few recipe in YouTube but finally I got this egg less recipe from here I slightly adjusted the recipe to suit our taste.This is my first attempt on this cake was just perfect final result is amazing.Do try it yourself and let me know the feedback.

Ingredients:
  • All purpose flour( Maida)-1 1/2 cups
  • Thick curd-1 cup
  • Sugar powder-1 cup
  • Milk powder-1 tbsp
  • Baking soda-1/2 tsp
  • Baking powder-1 1/4 tsp
  • Cooking oil-1/2 cup
  • Vanilla essence-2 tsp
  • Coca powder-1 1/2 tbsp
  • Milk- 4tbsp


Method:
Preheat the oven at 180 C or 350 F.Grease the baking pan.
Sieve maida twice and keep aside.
In separate bowl take coca powder and milk, mix well without any lumps.
Mix the curd and sugar in another bowl, till the sugar dissolves.
Add baking powder and baking soda in to curd and sugar mixture.
Mix well and keep aside for 2 to 3 minutes.curd will turn frothy and start rising.
Add oil and vanilla essence, mix till well blended.
Now add maida,milk powder and fold gently.
Divide the batter into two equal portion.
In one portion add cocoa and milk mixture, mix nicely.
In another portion add two tbsp milk to adjust the consistency.
Most important part is assembling the batter into pan.
Take two ladle,one for chocolate batter and one for plain batter.
First pour a ladleful of the plain batter in the center of the cake pan.
Do not shake the pan the batter will spread by itself.then pour a ladleful
Of  the chocolate batter in the center of plain batter.
Repeat this process till the both batter are over.
Bake for 30 to35 minutes or till the toothpick inserted comes out clean.
Let it cool and slice.

Note:
Batter will spread by itself  do not shake the pan.

Oats and Peanut cookies(Eggless)

 A combination of oats,peanut and coconut makes this cookie is very nutritious and delicious.


Ingredients:
  • All purpose flour(maida) -3/4 cup
  • Oats-1/2 cup(quick cooking oats
  • Peanut-2 tbsp(roasted & crushed)
  • Coconut grated(desiccated)-1/4 cup
  • Sugar- 3/4 cup
  • Honey-1/2 tbsp                                     
  • Baking soda-1/4 tsp
  • Butter-1/2 cup(softened)
  • Water-1 to 2 tbsp




Method:
Sift maida and baking soda in a bowl.
Beat butter and sugar until fluffy and light.
Add maida,oats,peanut,coconut and honey in butter and sugar mixture,mix well.
Add water and make soft dough.
cover and refrigerate the dough for 20 to 30 minutes.
preheat the oven  at 350 F or 180 c.
Divide the dough into equal portion and shape them square or
round cookies with your palms.
place on greased baking tray and bake for 12 to 15 minutes or
till the cookies are golden brown.
cool completely and store in air tight container.
enjoy with hot cup of tea.

Eggless Orange Cake

I came across this recipe from Nishamadhulika, i slightly adjusted  the recipe to suite our taste which prepared by fresh orange juice and orange zest. It makes cake super soft,I tried and it came out so well and my whole family just loved it.so do try this easy and foolproof recipe for this holiday season.


Ingredients:
  • All purpose flour(maida)-1cup
  • Sugar powder-1/2 cup
  • Milk powder -1tbsp
  • Orange juice-1/4 cup              
  • Orange Zest(peel)-1 tsp
  • Oil-1/2cup
  • Baking soda-1/4 tsp
  • Baking Powder-1/2 tsp




Method:
Grate some orange peel(Zest).
Cut the orange into halves and squeeze out the juice.
Preheat the oven at 350 F or 180 c. Grease the cake pan and keep aside.
Sieve the flour,baking powder, baking soda and mix well.
In a mixing bowl take orange juice and milk powder and mix well.
Add sugar,oil orange rind  and mix well.
Add maida and baking powder and baking soda mixture into it.
Mix well without any lumps.
Pour the batter onto prepared pan and bake for 25 to 30 minutes.
Or until the Toothpick comes out clean.
Cool for five minutes and invert and cool down and cut into desired slice.
Enjoy with hot cup of tea.
Note:
You can make with whole wheat flour instead of maida.

Eggless Dates Cake

This is one of my family's favorite cake and also the first cake which i learnt from my friend in early days of cooking,since i have been baking this.it is very simple and healthy cake because dates are a good source of iron,calcium,potassium and fiber,so try out this soft,moist and healthy cake for holidays.i hope you will like it.


Ingredients:
  • Maida(All purpose flour)-2 cup
  • Dates(खजूर) (seedless)-16 to 18
  • Sugar- 1 cup
  • Oil-1 cup
  • Milk -1 cup
  • Baking soda-1 tsp
  • Baking powder- 1 tsp


Method:
Soak dates with warm milk for 30 to 35 minutes .
Grind the dates into fine paste. Preheat the oven at 350F for 15 minutes.
In a mixing bowl sieve maida along with baking powder and baking soda.
Now add sugar and mix properly.
Add dates paste and oil and again mix well.
Pour the prepared batter into greased cake pan.
Bake for 35 to 40 minutes or check it with tooth pick if comes out clean.
Cool down completely and cut it.
Enjoy!!!
Note:
If you are using brown dates so soak them for  2 to 3 hours in warm milk.

Eggless Milk powder Cake

I learn t this cake from my mom-in-law. It is very simple and an easy cake recipe. I tried first time, it turned out so soft and delicious.


Ingredients:
  • All-purpose flour (Maida)-1cup
  • Milk powder-1/2 cup
  • Sugar powdered -1/2 cup
  • Oil-1/2 cup
  • Milk-1/2 cup
  • Baking powder-1/2tsp
  • Baking soda-1/4 tsp
  • Vanilla essence-1/2tsp
  • Cashewnuts-1tbs broken pieces
Preparation:
 Mix Maida, baking powder, Baking soda together in a mixing bowl.
 Preheat the oven at 350 degree F.
 Add milk powder, sugar powder, and oil into Maida mixture.
 Add milk and vanilla essence, cashew nuts and mix it nicely.  
 Pour the mixture into greased baking tray.
 bake  for 20 to 25 minutes. if the cake is done by
 inserting a toothpick in the center of the cake.
 it should come out clean.let it cool completely then cut into pieces.
   Enjoy your egg less milk powder cake with your family.

Naan Khatai(Eggless Indian Cookies)

Naan khatai is very popular Indian cookies. It is egg less crispy and quite easy to make.
 Ingredients:
  • Maida(all purpose flour)-1 cup
  • Sugar powder-1cup
  • suji(rava)-1/4 cup
  • Besan(gram flour)-1/2 cup
  • Ghee-1/2 cup
preparation:
Preheat the oven 350 degree F or 180 degree c.
Take melted ghee in big mixing bowl beat it till get light and white fluffy.
It takes around 3 to 4 minutes. If you’re doing in summer you can keep some ice bottom of mixing bowl.
Add sugar powder mix properly.
Now add maida, suji and besan one by one mix it properly.
Knead them together make smooth dough. Divide into small balls.
Press gently with your palm. Make mark with knife.
Arrange them on greased cookie sheet 2inches apart.
Bake them in preheated oven for 12 to 15 minutes.
Take out from the oven let it cool them completely. Store in an air tight container.
Enjoy with family and friends with hot cup of tea.
