Rava and Coconut Laddu

This rava and coconut laddu is my family's favorite, so i prepared it very often. it made with  roasted rava,coconut and sugar syrup .it is very easy to prepare and at the same time most delicious laddu that one can ever relish.Navratri,Dushera and Diwali is around the corner,so give this laddu a try. you cannot go wrong with this.

Ingredients:
  • Rava(suji)-2cups
  • Coconut(grated)-1cup
  • Sugar-11/2 cup
  • Ghee-1/2cup
  • Water-3/4 cup water
  • Raisin-for garnising
  • Cardamom powder-1/4tsp

How to prepare:
Melt the ghee in heavy bottomed pan roast the rava till get golden brown or get nice roasted aroma.
Keep aside. In that Same pan dry roast coconut on medium heat for 2 minutes. Keep with roasted rava. Take sugar and water into pan, boil and allow the mixture to simmer until it getsClose to single thread consistency. Turn off the heat add roasted rava,coconut,raisin,and cardamom Powder, mix well everything properly. After few minutes when mixture can be handled,Grease your palm with ghee take small amount of mixture roll it into Laddu. Let them cool completely and keep in airtight container.
Makes approxmatily 22 to 24 laddus.

Note :
If you are not able to make Laddu or mixture becomes little dry, you may sprinkle some milk.

Corn Boondi Bhel

Bored with regular bhel try this healthy,quick and spicy mouthwatering bhel.  
Ingredients:
  • Corn kernels-1cup(boiled & drained)
  • Spicy boondi-1cup
  • khatti Meethi chutney(Tamarind chutney)-2tbsp
  • Green chutney -1tbsp
  • Sev-1/2cup
  • Onion-1(finely chopped)
  • Tomato-1(finely chopped)
  • Chat Masala-1tsp(To Taste)
  • Green Chilli-2(finely Chopped)
  • Coriander Leaves-for garnishing  
  • Sendha namak (black Salt)-to taste
How to Prepare: 
Take one large mixing bowl add corn,onion,tomato,chilli,chat masala
then add boondi,sev, both chutneys,coriander leaves,salt and mix well everything.
serve immediately.

Methi Chicken(chicken with fenugreek leaves)

 I came across this recipe from vah chef since then i have been making this whenever i get fresh methi leaves, it doesn't require much spices as the aroma of methi leaves makes the dish very delicious.which is quite easy to prepare, tastes great with plain rice. give a try, you will surely like it.

Ingredients:
  • Chicken-1 1/2 lb
  • Methi-1medium sized bunch(chopped)
  • Curd-1cup
  • Onion-2 large (finely chopped)
  • Tomato-2 medium sized (chopped)
  • Ginger garlic paste-2tbsp
  • Cumin seed-1tsp
  • Turmeric powder-1/2tsp
  • Red chilli powder-1tsp
  • Coriander powder-1tsp
  • Oil-1tbsp
  • Salt-to taste


How to prepare:
Wash chicken and cut into small pieces.
Wash methi leaves 2-3 times in running water, drain and chopped.
Heat oil in a pan,add cumin seed let them splutter then add onion and add pich of salt.
Fry till onions turns golden brown,add ginger garlic paste and fry till raw smell goes away.
Add tomato and fry it till it becomes soft.
Add turmeric powder, red chilli powder,coriander powder and mix well.
Now add whisked curd and mix well,make sure to stir continuously.
Add chopped methi leaves and cook for 2-3 minutes.
Add chicken pieces and required salt mix everything properly.
Cover and cook on medium low heat till chicken gets cooked.
Keep stirring in between.
Turn off the heat serve hot with rice or chapati.

Instant Suji (Semolina)Dhokla in Microwave

Dhokla is very popular Gujarati snack item traditionally made with rice and lentils. when I saw this recipe in nishamadhulika I couldn't resist myself to try out. It is very delicious,soft and spongy as well as very quick and easy to make.it can be made in a jiffy If you have unexpected guest at home.


Ingredients:
  • Suji(rava)-1cup
  • Curd-1 cup( whisked)
  • Oil-2tbsp
  • Ginger & green chilli paste-1tsp
  • Salt-to taste
  • Turmeric powder-1/4tsp
  • Eno fruit salt 1/4tsp
  • Water-3/4 cup
  • Coriander leaves-1tbsp(finely chopped)
  • Coconut(grated)-1tbsp (for garnishing)
To temper:
  • Oil-1tbsp
  • Curry leaves-few
  • Hing-a pinch
  • Mustard seed-1/4tsp
  • Sesame seed -1/4 tsp
  • Green chilli- to taste (slit)
How to prepare:
Take big mixing bowl add suji,curd and oil mix well untill there are no lumps.
Add green chili and ginger paste,turmeric powder,salt mix them well.
Keep the batter aside for 10 minutes.
In the meantime grease microwave safe bowl.
After ten minutes add eno fruit salt  and mix well untill bubbles appear on the batter.
Quickly pour the batter into greased bowl,spread evenly.
 Microwave on high for 4 minutes, insert a tooth pick if its done. It should come out clean.
Let it cool down and cut the dhokla into square pieces.
Heat oil into small pan add mustard seed let them splutter,add sesame seed,add green chili
Curry leavs And hing cook fo 15 to 20 seconds. Switch off the heat.
Pour this over the dhokla pieces and garnish with grated coconut and coriander leaves.

Chana Dal with Cabbage

If you feel bored with the regular dal and sambar so try out this healthy and comforting
combination of chana dal and cabbage which is very simple to prepare and delicious.
Ingredient:
  • Chana Dal-1cup
  • Cabbage-1cup(finely chopped)
  • Curry leaves- sprig
  • Tomato-1 (chopped)
  • Green chilli-2 chopped
  • Hing(asafoetida)- a pinch
  • Oil-1tbsp
  • Mustard seed-1/4tsp
  • Whole red chilli-2
  • Coriander leaves- for garnishing
  • Salt to Taste
How to prepare:
Soak chana dal for at least 30 minutes .
In a pressure cooker add chana dal and water.close the lid and cook for 2 whistle on medium heat.
switch off and let the pressure go on its own.
Heat oil into pan add mustard seed let it splutter,add asafoetida,red chilli ,curry leaves saute for few seconds. now add turmeric powder stir well,add chopped tomato and salt cook until tomatoes are mashed.add chopped cabbage and mix.cook for 4 or 5 minutes,or cabbage is soft not mushy.
now add cooked chana dal and simmer for 3 to 4 minutes.
Garnish with fresh chopped coriander leaves and serve with rice and chapati.

Corn and Methi Kabab

Corn and methi kabab is very healthy,delicious and preparation is quite easy, made with corn,methi and potato.Try out this flavorful and perfect tea time snack.


Ingredients:
  • Corn-1cup( boiled & mashed)
  • Methi (fengureek leaves)-1cup finely chopped
  • Potato-1/2cup ( boiled &mashed)
  • Rice flour-2tbsp
  • Coriander leaves-1tbsp(chopped)
  • Chat masala-1tsp
  • Chilly powder-1tsp(to taste)
  • Turmeric powder-1/2 tsp
  • Salt-to taste
How to prepare:
Coarsely mash potato and corn in a big bowl.
Add chopped methi,coriander leaves,chat masala,salt,turmeric powder,chilly powder and rice flour.
Mix everything properly. Shape it into small sized patties.turn on the heat on medium.
Shallow fry the patties on non stick pan with some oil,until golden brown on both sides.
Serve hot with tomato ketchup or Green chutney
Note:
You can deep fry patties too.

Eggless Chocolate Cake Using Milk powder

This egg less chocolate cake  is perfect for chocolate lover, it is very soft ,moist and spongygood thing is it doesn't have egg and butte,as well as very easy to make.I have used milk powder according to my mom-in-law's suggestions.My daughter turned 2 day before yesterday, i wanted to bake egg less cake for her because she likes chocolate. it turned so good.I slightly Adapted  this recipe from 

Ingredients:
  • All purpose flour (maida)-1cup
  • Milk powder-1/2 cup
  • Sugar-1cup
  • Cocoa powder (unsweetened)- 3tbsp
  • Baking soda-1tsp
  • Salt -1/4tsp
  • Lemon juice-1tbsp
  • Water-1cup
  • Oil-1/4 cup
  • Vanilla essence-1/2tsp
How to prepare:
Pre heat the oven at 180 degree c or 350 degree f .for15 minutes.
Grease the baking pan with oil or sprinkle flour. Keep aside.
In large mixing bowl sift maida ,baking soda, milk powder,cocoa and sugar.
Add oil,water and mix everything properly.
Add salt ,lemon juice and vanilla essence and mix well.
Now pour the batter into cake pan.
Bake for 25 to 30 minutes or toothpick inserted into the center of the cake
Comes out clean.cool completely.flip over on plate.
Enjoy!!!
Note:
I have used 1/2 cup milk powder in this cake,the original recipe didn't use it,
If you want you can skip it.

Mint Rice with Coriander (Pudina Chawal with Dhaniya)

This rice is a combination of coriander and mint ,it is very easy to make,Tasty and the aroma makes you want more and it will best one pot meal. Serve with Any Raita and pickle. Lets start how to make this simple yet tasty rice dish.
Ingredients:
  • Rice-1cup
  • Mint leaves-1cup(roughly chopped)
  • Coriander -1cup
  • Green chillies-2-3( as per your taste)
  • Ginger garlic paste-1tbsp
  • Salt- to taste
  • Cumin seeds-1/2tsp
  • Oil-1tbsp
How to prepare :
Cook the rice and allow the cooked rice to get cool.
Grind mint leaves along with coriander and green chillies to a paste.
Heat oil in a pan add cumin seed and sauté for seconds Add ginger garlic paste till raw
smell goes,add ground paste and salt,,To the pan fry for 2-3 minutes until it turns fragrant.
turn off the heat. Add the rice and mix properly without breaking much.
Enjoy with any raita or pickle.

Besan Ladoo In Microwave

Happy Ganesha Chathurthi to All. Besan Ladoo prepared during all festivals and auspicious occasions.it is impossible to think of any Indian festival or celebration without sweets.I used boora in this recipe instead of powder sugar..if you want to know How to make Tagar or Boora click here. it is very easy and simple process to make boora.I made these Ladoo in microwave it is very quick and easy, you do not have keep stirring. Lets start how to prepare this easy and tasty ladoos.
Ingredients:
  • Besan(gram flour)-2cup
  • Boora-1cup
  • Ghee-3/4cup
  • Cardamom powder-1tsp
  • Almonds chopped-1tbsp
  • Raisin-few
How to prepare:
Take ghee in microwave safe bowl and microwave for 30 seconds.
Mix besan with melted ghee and microwave for 2 minutes.
Take out the bowl from microwave mix nicely again.
Microwave again for one minutes.keep checking and stirring after 1 minute.
In 6-7 minutes besan should be a light brown in color and with nice aroma.
Allow it cool completely. Then add boora ,cardamom powder,almonds pieces
And raisins. Mix everything properly and make round Ladoos of your size.

Note:
you can use sugar powder too.

Methi Matar Malai

Methi matar is very famous dish from North India. It is very rich, creamy and flavorful dish.I get fresh methi bunch from farmers market, I tried...it tasted so good with chapati and Rice. Even my son also loved it. So try this creamy,rich and easy to make recipe.

   Ingredients:
  • Fenugreek leaves/methi-1 cup (finely chopped)
  • Green peas(matar)-1/2cup ( I used frozen)
  • Cream-1/2cup ( I used half & half)
  • Tomato-3
  • Ginger-1tbsp
  • Coriander powder-1/2tsp
  • Cumin powder-1/4tsp
  • Red chilli powder-1/4tsp
  • Cashew( kaju)-12
  • Sugar-1/2tsp
  • Cumin seed-1/2tsp
  • Hing-1 pinch
Garam Masala for Grind:
Cinnamon (dalchini)-1/2 inch, black pepper( Kali mirch)5-6,
cardamom ( badi elayachi)-2, clove(Laung)3
How to prepare:
Wash methi leaves in running water for 2-3 times. Drain and chop finely.
Roughly chop tomato, green chili,ginger and cashews, grind all into smooth paste
In the blender. Keep aside.Coarsely grind dry garam masala. 
Heat oil in a pan add jeera when it splutters, add hing, coriander powder ,red chili powder
Ground paste and fry on medium heat till raw smell goes off without changing the color.
Add methi leaves and green peas and salt cook till peas and methi  gets cooked well.
Add coarsely ground garam masala and sugar,Cook on medium heat for 4-5 minutes.
Add cream and mix properly. Let it simmer for 2- 3 minutes. You can adjust the consistency 
By adding the water.
