Soya and Rice Paratha

Do you have leftover rice? so try out this very high in protein and fiber rich paratha recipe with leftover rice.


Ingredients:
  • Cooked rice-1/2 cup
  • Soya granules -1/4cup
  • Wheat flour-1cup
  • Ginger Garlic paste-1/2tbsp
  • Chili powder-1/4tsp
  • Turmeric powder-1/4tsp
  • Coriander leaves(chopped)-1tbsp
  • Salt to taste
  • Oil for cooking


Method:
Mix all the ingredients in a mixing bowl except oil and additional water
mix well and knead to make a soft dough.
Cover and keep for 10 to 12 minutes.
knead dough once again and divide the dough into small size balls.
Roll the ball into medium size thick chapati using little flour.
Heat tawa or non stick pan place paratha on it and drizzle some oil on both side
cook till brown spots appear on both sides.
serve hot with curd or any pickle.

Note:
if you don;t have soya granules,grind the soya chunks into grinder to make fine powder.

Capsicum and Soya chunks Curry(Green Pepper with Nutrela)

We all know Nutrela are rich in proteins and peas and capsicum are packed with nutrients and vitamins. I prepared this  simple yet very tasty and something different combination. this quick and tasty curry goes well with chapati.Try this healthy and easy recipe for yourself and enjoy!!!


Ingredients:
  • Capsicum-2 (cut into cubes)
  • Nutrela(soya chunks)-1cup
  • Green peas-1/2 cup( I used frozen)
  • Onion-1choppedGreen chilli-2chopped
  • Curd -2tbsp
  • Ginger garlic past-2tsp
  • Hing-pinch
  • Cumin seed -1/4tsp
  • Turmeric powder-1/4 tsp
  • Coriander powde-1/2 tsp
  • Red chilli powder-1/4tsp
  • Salt - to taste
  • Oil-1tbsp
How to prepare:
Soak Nutrela in warm water for 15 minutes.
Heat oil in pan add cumin seed when they start splutter, add hing saute for seconds.
Add onion and saute until golden brown in color. Add ginger garlic paste and green chilli
fry until raw smell goes away. Add curd ,turmeric powder,red chilli powder ,coriander powder and salt cook for 2-3 minutes or till oil separates.Add capsicum,peas and soaked soya chunks and mix well. Add 1&1/2 cup of water and simmer for 8 to 10 minutes. Turn off the heat.
Garnish with coriander leaves .
Serve hot with chapati.

Nutrela(Soya Chunks) Peas Pulav

Nutrela is very high in protein and fiber. It’s a meat substitute for vegetarian. Nutrella is my son's Favorite too, he loved so much so I make it so often for his school lunch. This delicious pulav is quite Easy to make and very nutritious. it taste great with curd. You can add any vegetables of your choice.Try this simplest One pot meal.
Ingredient:
  • Rice -2cups
  • Nutrela-1cup
  • Peas-1/2cup
  • Potato-2
  • Onion-1(chopped)
  • Ginger garlic paste-1tbsp
  • Cumin seed-1/4tsp
  • Turmeric powder-1/4tsp
  • Garam masala- 1/4tsp
  • Oil-1tbsp
  • Salt-to taste
  • Coriander leaves-for garnishing 

Method:
Soak nutrela in hot water for 20 minutes.
Wash rice and drain the water and keep it aside.
Wash potato and cut it into cubes. I don’t peel potatoes.
Heat oil in pan add cumin seed when they start splutter add onion and green Chilli fry
Until onions turn light brown.
Add ginger garlic paste and sauté till raw smell goes away.
Add turmeric powder fry for seconds. Add potato green peas mix properly.
Now squeeze the water from nutrela  and  add it to the pan. cook for 2 to 3 minutes
Add rice, salt and garam masala give a nice stir. Add  4 cups of water. Cover and cook till
Rice has done. Garnish with coriander leaves. Serve hot with curd.
