Achari Chicken( chicken cooked with pickling spices)

Pickle lovers will adore this yummy dish.This dish tastes best when it is allow to sit for a while after cooking.


Ingredients:
  • Chiken-1 lb
  • Onions-2 medium( finely chopped)
  • Tomato-2 medium( chopped)
  • Fenugreek seeds(methi)-1/4 tsp
  • Mustard seeds( rai)-1/2 tsp
  • Cumin seeds( jeera)-1 tsp
  • Nigella seeds( kalonji)-1/2 tsp
  • Fennel seeds( sauf)-1/4 tsp
  • Black salt-1/4 tsp                            
  • Lemon juice-1 tbsp                             
  • Ginger garlic paste-2 tbsp
  • Hing( asafetida )-1/2 tsp
  • Mustard oil-3 tbsp
  • Curd-1 cup
  • Red chili powder-1 tsp
  • Coriander powder-1/2 tbsp
  • Garm masala-1 tsp
  • Turmeric powder-1/2 tsp
  • Salt to taste
  • Coriander leaves for garnishing


Method:
Put the chicken in a contairner.Add ginger garlic paste,lemon juice and 1 tsp salt and rub properly.
Cover the container and put in the refrigerator for 1 to 2  hours  to marinate.
Heat a pan on medium heat add oil add hing, red chili and sauté for few seconds.
Add methi,cumin,sauf,mustard and kalonji sauté for 30 seconds.
Add onions and cook for 3 to 4 minutes.
Add tomato and cook2 to 3 minutes. Now add red chili powder, coriander powder, turmeric
Powder and stir well.
Add chicken and stir. Cover and cook for 20 to 30 minutes or chicken is half done.
Add black salt  and cook chicken is almost done.
Add the curd and cook for another 6 to 8 minutes.Add  garam masala and stir well
Turn off the heat and garnish with coriander leaves.

Sukha chicken(Maharashtrian Style)

I always search chicken recipe because chicken is my family's favorite then i found this recipe in sanjeev kapoor site it is very easy and quick chicken recipe which filled my home with the aroma of all the wonderful spices. Do try at home I'm sure you will love it.

Ingredients:
  • Chicken-1/2 lb(cut into medium pieces)
  • Green capsicum-1 ( chopped into cubes)
  • Onions -2 medium(chopped)
  • Garlic-7-8 cloves
  • Ginger-1 inch
  • Peppercorn-8 to1Cloves-5 to 6     
  • Coriander seeds-1 tbsp
  • Cumin seeds-1 tsp
  • Whole red chili-3
  • Cinnamon stick-1 inch
  • Coconut-1 cup (dried and grated)
  • Coriander leaves for garnishing
  • Turmeric powder-1/2 tsp
  • Salt to taste
  • Oil- 2 tbsp

Method:
Heat a pan on medium flame add coconut and dry roast until light golden brown.
Keep aside to cool.In same pan dry roast all spices cloves,coriander ,red chili,cumin, cinnamon,peppercorn on low heat.Place onion, ginger,garlic,coconut and roasted spices
in a grinder and grind into a fine Paste.
Put the cleaned chicken pieces in a bowl and prick the pieces with a fork.
Add ground paste,salt and mix well,cover and keep in refrigerator for 2 to 3 hours.
Heat oil in a pan add marinated chicken and cook for 4 to 5 minutes add turmeric powder
And adjust the salt and cook for 8 to 10 minutes or chicken is done.
Add capsicum pieces and mix well and cook for 2 to 3 minutes.
Garnish with Coriander leaves.
Serve hot with chapati.

Chicken Masala Curry

This chicken masala curry is very famous in North India,whenever I made this, it is always a hit.this flavorful and delicious is perfect, If you have some surprise guest.
Ingredients:
  • Chicken-1lb(washed& cut into pieces)
  • Tomato- 3( pureed)
  • Onions-3( finely chopped)
  • Ginger garlic paste-2 tbsp
  • Turmeric powder-1/2 tsp                    
  • Red chili powder1/4 tsp
  • Coriander powder-1 tsp
  • Cinnamon stick-1 inch
  • Green cardamom-4 to5
  • Cloves-3
  • Poppy seeds-1/4 tsp
  • Bay leaf-2
  • Cumin seeds1/4 tsp
  • Black pepper- 3 to 4
  • Salt to taste
  • Oil-2 tbsp


Method:
Heat oil in a pan add cumin seeds,cinnamon stick,black pepper,poppy seeds
Bay leaf ,cloves,cardamom and saute for few seconds.
Add onions and saute until golden brown,add ginger garlic paste  and fry until raw smell
Goes away.
Add the tomatoes and cook until the oil comes to the top.
Add turmeric powder,red chili powder,coriander powder and stir well.
Add the chicken,salt and mix well and cook for 5 to 6 minutes, until the chicken
Pieces are well coated with sauce.
Add 1 and 1/2 cup of water and bring to a boil.cover and cook for 10 minutes.
Or until chicken is cooked. Stirring occasionally.
Turn off the heat and garnish with some ginger Julianne and slit green chili.

Tandoori Chicken

Tandoori chicken is highly popular dish in Indian restaurant for all chicken lovers.if you want best authentic Tandoori chicken then you need to plan ahead. Chicken has to marinated for 6 to 8 hours And cover and refrigerate.keep the chicken outside for at least 30 minutes before cooking then only you can get remarkable result.I followed the recipe from vah chef and Sanjeev kapoor with a little modification.

Ingredients:
  • Chicken-leg and drumsticks(even thigh or breasts pieces)-6 -7 pieces
First marination:
  • Chili powder-1/4 tsp
  • Ginger garlic paste-1tsp
  • Lemon juice-2 tsp

Second marination:
  • Hung curd ( thick curd)-1cup
  • Ginger garlic paste-2 tsp
  • Red chilli powder-1 tsp
  • Coriander powder - 2 tsp
  • Cumin powder-1 tsp
  • Kasoori methi -1 tsp
  • Red color- 1/2 tsp (optional)
  • Salt to taste
  • Oil- 2 to 3 tsp
  • For garnishing 
  • Butter or ghee -2 to 3 minutes
  • Lemon 
  • Onion
  • Coriander leaves
 Method:
First wash and clean the chicken pieces and cut 3 or 4 deep slits on each pieces.
Mix all the ingredients listed on first marination and apply all over the pieces.
Cover and keep aside for half an hour.
Mix all the ingredients list on second marination except oil make a thick paste.
Apply all over the chicken pieces make sure to apply properly between all the slits.
Finally add oil all over the pieces.
Keep in the refrigerator for at least 6 to 8 hours.
Preheat oven to 425 degree F.
place chicken pieces in the tray or rack, once oven is hot put the pan in the oven.
cook for 12 to 15 minutes and turn around the pieces cook and for another15 minutes.
turn off the oven, apply some butter with the help of brush or spoon,
let the chicken rest for 10 minutes inside the oven.
Take out and garnish with coriander leaves,onions rings and squeeze some lemon.

Methi Chicken(chicken with fenugreek leaves)

 I came across this recipe from vah chef since then i have been making this whenever i get fresh methi leaves, it doesn't require much spices as the aroma of methi leaves makes the dish very delicious.which is quite easy to prepare, tastes great with plain rice. give a try, you will surely like it.

Ingredients:
  • Chicken-1 1/2 lb
  • Methi-1medium sized bunch(chopped)
  • Curd-1cup
  • Onion-2 large (finely chopped)
  • Tomato-2 medium sized (chopped)
  • Ginger garlic paste-2tbsp
  • Cumin seed-1tsp
  • Turmeric powder-1/2tsp
  • Red chilli powder-1tsp
  • Coriander powder-1tsp
  • Oil-1tbsp
  • Salt-to taste


How to prepare:
Wash chicken and cut into small pieces.
Wash methi leaves 2-3 times in running water, drain and chopped.
Heat oil in a pan,add cumin seed let them splutter then add onion and add pich of salt.
Fry till onions turns golden brown,add ginger garlic paste and fry till raw smell goes away.
Add tomato and fry it till it becomes soft.
Add turmeric powder, red chilli powder,coriander powder and mix well.
Now add whisked curd and mix well,make sure to stir continuously.
Add chopped methi leaves and cook for 2-3 minutes.
Add chicken pieces and required salt mix everything properly.
Cover and cook on medium low heat till chicken gets cooked.
Keep stirring in between.
Turn off the heat serve hot with rice or chapati.

Kohlapuri Chicken

Kolhapuri chicken is a spicy and delicious curry of Maharashtra. this hot and spicy Chicken cooked with sesame seed, coconut, poppy seed and deghi mirchi(I used Kashmiri red Chilli) it dish goes well with rice and chapatti.

Ingredients:
  • Chicken (cut into pieces) - 1lb
  • Onion-1 big (finely Chopped)
  • Ginger garlic paste-2tbsp
  • Black peeper -4-5
  • Red Chilli powder-1/2tsp
  • Turmeric powder-1tsp
  • Dry coconut (grated)-1/4cup
  • Sesame seed- 2tsp
  • Poppy seed-2tsp
  • Cinnamon-2inch piece
  •  Green Cardamom-2
  •  Black cardamom-1
  •  Cloves-3
  •  Mace-1 blade
  •  Nutmeg powder-1/4tsp
  •  Whole red dry Chilli-6-7 (I used Kashmiri Red Chilli)
  •  Oil-2tbsp
  •  Salt-to taste
  •  Coriander leaves- for garnishing



Method:
Clean the chicken and cut into small pieces. Marinated the chicken with turmeric powder
Salt and keep aside for half an hour.
Dry roast sesame seed, poppy seed, black cardamom, green cardamom, cinnamon, and clove
Peppers, mace,whole red Chilli  in last add coconut fry till little brown. Cool down and grind it.
Keep this masala aside.
Heat oil in pan add onion fry till becomes golden brown.
Add ginger garlic paste fry till raw smell goes away.
Add chicken pieces and salt mix everything properly.
Now coconut masala, turmeric powder, red Chilli powder and sauté for few seconds
Cover and cook.  Keep stirring in between. Add required salt.
Now add 1&1/2 cup of water and nutmeg powder,Cover and cook till chicken is done.
Garnish with chopped coriander leaves.
Serve hot with rice or chapatti.

Kadahi Chicken

Kadhahi chicken cooking is not easy process. But I found this easiest recipe in show me the curry.It doesn’t require much ingredients like other chicken curry.it has very unique flavor as well as delicious and healthy too.Do try this easy to prepare kadahi chicken. Enjoy and Have Fun!!!!
Ingredients:
  • chicken pieces clean &washed(with or without bone)-1and 1/2 lb
  • Onion-1 big (sliced)
  • Tomatoes-2big (chopped)
  • Tomato puree-1/2cup
  • Green pepper(capsicum)
  • Ginger garlic Paste-2tbsp
  • coriander seed-2tbsp
  • whole red dry chilli-2
  • Methi(fenugreek seed0-1/4tsp
  • Amchoor powder-1/4tsp
  • Garam masala-1/4tsp
  • Turmeric powder-1/2tsp
  • Salt to taste-
  • Oil-2tbsp
  • Half &Half-1cup
  • Ginger Julianne- fro garnishing
  • Coriander leaves- for garnishing
Preparation:
First dry roast coriander seed,methi  and whole red Chilli till nice aroma comes.
Once they cool grind to coarse.
Heat oil in a kadahi or pan add onions sauté till it gets little brown.
Add ginger garlic paste till raw smell goes away.
Add tomatoes and salt sauté till tomatoes gets soft.
Add in grounded masala and mix it properly.
Add chicken and other masala turmeric,red chili, garam masala and amchoo,
Mix it well. Cover and cook for 10- 15 minutes. Stir occasionally.
Add sliced green pepper. Cook for 2 to 3 minutes.
Add half and half let it boil. Turn off the heat.
Garnish with chopped coriander leaves and Julianne ginger.
Enjoy with rice or biryani!!!
