Oats Muthiya(Steamed Oats Dumplings)

Muthiyas are typical snacks from Gujarat and favorite snack at our house.you can refrigerate any leftover served at breakfast or for kids lunch box.you could use carrot,spinach,methi instead of cabbage...experiment with your favorite combinations of vegetables.


       
Ingredients:
  • Oats-3/4 cup(coarsely)
  • Cabbage-2 cup(grated)
  • Suji(semolina)-2 tbsp
  • Curd-3 tbsp
  • Red chili powder-1 tsp
  • Coriander powder-1 tsp
  • Ginger paste-1 1/2 tsp
  • Turmeric powder-1/4 tsp
  • Asafetida- pinch
  • Coriander leaves-1/2 tbsp( chopped)
  • Oil-2 tsp
  • Sesame seeds-1/2 tsp
  • Salt to taste


Method:
Add cabbage,oats,turmeric powder,coriander powder,chili powder,ginger paste
Coriander leaves,curd and hing in a bowl.mix well and knead to make a sticky dough.
Do not add water.
Grease your palms with a little oil.Divide the dough into equal portion and shape into cylinder.
Put the rolls on a steaming tray and place in the steamer.Steam for 12 to 15 minutes.
Or until a toothpick or knife inserted into one of the pieces comes out clean.
Remove from  and let cool completely.
Cut into 1 inch pieces.
Heat oil in a pan add sesame seeds when the seeds sputter add the dumpling
Pieces and toss well and saute for 3 to 4 minutes.
Garnish with chopped coriander leaves.
Serve hot.

Cabbage Kofta Curry


Ingredients:
For Kofta:
  • Cabbage grated-2&1/2 cups
  • Besan(gram flour)3/4 cup
  • Ginger(grated)-1/2 tsp
  • Coriander leaves (chopped)-2 tsp
  • Salt to taste
  • Red chili powder-1/4 tsp
  • Oil for fry

For gravy :
  • Onion-1 (finely chopped)
  • Tomato-2 chopped
  • Peanut-2 tbsp
  • Turmeric powder-1/2 tsp
  • Ginger garlic paste-1/4 tbsp
  • Red chili powder -1/4 tsp
  • Coriander powder-1/2 tsp
  • Cumin seeds-1/4 tsp
  • Asafetida (hing)- pinch
  • Green chili -2 chopped
  • Garam masala-1/2 tsp
  • Salt to taste
  • Oil-2 tbsp
  • Coriander leaves for garnish


Method:
Make the koftas:
Mix all the ingredients needed for koftas,do not add any water.
Make small balls out of them.
Heat oil in a kadahi.when oil is hot add kofta, a few at a time,and fry the
Koftas until they turn golden brown.keep on paper towel.
Make the gravy:
Grind the tomatoes and peanut to make puree.
Heat the oil in a pan add cumin seeds,hing and green chili Let them crackle,add onion and
sauté until they turn light brown in color.Now add ginger garlic paste, fry til raw smell goes off.
Add tomato and peanut purée and keep frying the tomatoes till the oil separates from the sides.
Add turmeric powder,red chili powder, coriander powder,garam masala and fry for few seconds.
Add 2 & 1/2 cups water,salt and bring to boil, lower the heat and simmer for 6 to 8 minutes.
Add prepared koftas and let it simmer for another 3 to 4 minutes.
Turn off the heat and garnish with chopped coriander leaves.
Serve hot with rice and chapati.

Chana Dal with Cabbage

If you feel bored with the regular dal and sambar so try out this healthy and comforting
combination of chana dal and cabbage which is very simple to prepare and delicious.
Ingredient:
  • Chana Dal-1cup
  • Cabbage-1cup(finely chopped)
  • Curry leaves- sprig
  • Tomato-1 (chopped)
  • Green chilli-2 chopped
  • Hing(asafoetida)- a pinch
  • Oil-1tbsp
  • Mustard seed-1/4tsp
  • Whole red chilli-2
  • Coriander leaves- for garnishing
  • Salt to Taste
How to prepare:
Soak chana dal for at least 30 minutes .
In a pressure cooker add chana dal and water.close the lid and cook for 2 whistle on medium heat.
switch off and let the pressure go on its own.
Heat oil into pan add mustard seed let it splutter,add asafoetida,red chilli ,curry leaves saute for few seconds. now add turmeric powder stir well,add chopped tomato and salt cook until tomatoes are mashed.add chopped cabbage and mix.cook for 4 or 5 minutes,or cabbage is soft not mushy.
now add cooked chana dal and simmer for 3 to 4 minutes.
Garnish with fresh chopped coriander leaves and serve with rice and chapati.

Cabbage Capsicum & Peas Curry


Cabbage is very nutritious vegetable and capsicum is great for metabolism.so try this
simple and Healthy dish with unique and delicious flavor. This curry goes well with paratha
Or chapatti.
Ingredients:
  • Cabbage-1cup(shredded)
  • Capsicum(green pepper)-1/2cup (chopped)
  • Peas-1/4cup
  • Turmeric powder-1/4tsp
  • Coriander Powder-1/2tsp
  • Green chilli -2 chopped
  • Hing(asafetida)-a pinch
  • Oil-1tbsp
  • salt-to taste
  • Cumin seed-1/4tsp
  • Mustard Seed-1/4 tsp

Method:
Heat oil in pan add cumin and mustard seed when they start pop add green chilli and
hing saute for few seconds add cabbage,capsicum and peas mix everything well.
Add Turmeric powder,coriander powder and salt mix properly,cover it and cook
on medium flame till vegetables are done.turn off the heat.
Garnish with coriander leaves. serve hot with chapati or paratha.

Cabbage Capsicum Rice

This is very tasty and flavorful rice recipe. It takes very less time to prepare and tastes too good.Healthy one pot meal relished with any raita or curd.



Ingredients:
  • Cooked Rice-2cup
  • Capsicum-1cup( all colors cut it into lengthwise)
  • Cabbage-1cup(finely chopped)
  • Ginger garlic paste-1tbsp
  • Cumin Seed-1/4tsp
  • Black Pepper-6-7
  • Green chilli-2(finely chopped)
  • coriander leaves- for garnishing
  • Oil-1tbsp
  • salt to taste
Preparation:

Heat oil in pan add cumin and black pepper sauté for few seconds.

Add green Chilli and ginger garlic paste cook till raw smell goes.

Add chopped cabbage and capsicum sauté for 4 to 5 minutes.Don't over cook.

Add salt and cook for another 1 minute.

Now add cooked rice mix properly. Turn off the heat.

Garnish with coriander leaves.

Enjoy your healthy rice with curd or raita.

 Note:You can also add onions for more flavor.

Spinach and Cabbage paratha

This is the perfect recipe for them, who don’t like to eat vegetable.Spinach and cabbage has loads of health benefits. They are excellent source of vitamin K also. it helps keep bones Healthy and strong.  These paratha tastes great with plain yogurt with salt and roasted cumin powder.And any raita,chutney or pickle of your choice.


Ingredients:
  • Spinach (finely chopped)-1cup
  • Cabbage (grated)-1/4cup
  • Wheat flour (atta)-1and ½ cup
  • Cumin seed -1/4tsp
  • Salt-to taste
  • Turmeric powder-1/4tsp
  • Green Chilli-2(finely chopped)
  • Ginger (grated) - 1/2tsp
  • Oil for cooking
Preparation:
Take wheat flour, spinach, and cabbage in a big bowl mix it well.
Add all the ingredients and water except oil to knead into soft dough.
Divide the dough into lemon size balls.
Roll out each ball into circle with using little flour.
Heat a pan and place the paratha on it cook for a minute.
Flip the paratha and drizzle some oil on both sides, cook till golden spots appear.
Enjoy your healthy paratha with curd or pickle.
