Tomato Rice

This delicious rice recipe is not only tasty but procedure is very very simple,when you are in hurry
do try this one pot meal.
Ingredients:
  • Rice-1cup
  • Tomato-3 big (chopped)
  • Onion-1chopped
  • Ginger garlic paste-1tbsp
  • Green Chilli-1(finely chopped)
  • Mustard seed-1/4tsp
  • Cumin seed-1/4tsp
  • Red chilli-1/4tsp
  • Salt- to taste
  • Oil-1tbsp
  • Curry leaves-1sprig
  • Chana /urad dal-1/4tsp each
Preparation:

Wash and soak rice for 10 minutes. Cook in rice cooker or pressure cook for 2 whistles
On medium heat with 2 cups of water.
Heat oil in pan add cumin seed, mustard seed let it crackle add chana and urad dal
After few seconds add chopped onion and curry leave, fry till golden brown.
Add green Chilli & ginger garlic paste sauté till raw smell goes.
Add chopped tomato fry till mushy or oil separates.
Add red Chilli powder, salt and mix well.
Now add this mixture on cooked rice, mix it gently.
Garnish with chopped coriander leaves.
Serve with any raita or pickle.
Enjoy!!!
Note:
You can use leftover rice for this recipe.
You may add green peas and potato also, it gives extra flavor.

Mirchi Ka Salan

Mirchi ka salan is very rich and creamy curry& most popular recipe in Hyderabad. It is very authentic recipe which prepared with sesame seed, coconut, and peanut patse. It can be eaten with biryani or chapatti.I saw this recipe in vah chef and sanjeev kapoor cookery show,I have combined them to suit my taste.
Ingredients:

  • Green Chilli-slit on one side and Deseed (don’t remove the stem)i used jalapeno.
  • Onion-1(finely chopped)
  • Ginger garlic paste-2tbsp
  • Turmeric powder-1/2tsp
  • Cumin powder-1/2tsp
  • Red chilli powder-!/4tsp
  • Cumin seed-1/4tsp
  • Mustard seed-1/4tsp
  • Methi(fenugreek seed)-1/4tsp
  • Hing-a pinch
  • Salt –to taste
  • Curd (yogurt)-1/4cup
  • Curry leaves-6-7
  • Tamarind pulp-1tbsp
  • Oil-for cooking
Masala for gravy:

  • Peanut-1/4cup
  • Coconut1/4cup
  • Sesame seed (white till)-2tbsp
  • Whole coriander seed-1/2tbsp
 preparation:

 First dry roast peanut, sesame seed, coconut & coriander seeds.
 Grind to a smooth paste. Keep aside.
 Heat oil in pan and sauté the chilies till they are soft. Keep them on paper towel.
 In the same oil add the cumin seed, methi, mustard hing and curry leaves.
 When they crackle add onion sauté till onion turn golden brown.
 Add ginger garlic paste sauté till raw smell goes away.
 Add peanut, sesame, coconut, & coriander paste and Fry for a while.
 Add turmeric, cumin powder and red Chilli powder, mix well.
 Add 1&1/2 cups of water and bring it to a boil. Don’t add too much water,
 It should be little thick Gravy.
 Add curd and tamarind pulp and cook until little thick.
 Add fried green Chilli and salt, cook for another 3 to 4 minutes.
 Garnish with chopped coriander leaves and serve hot with rice or chapatti.
 Enjoy!!!
 You can use colored bell pepper or green pepper instead of jalapeno.

Kadahi Chicken

Kadhahi chicken cooking is not easy process. But I found this easiest recipe in show me the curry.It doesn’t require much ingredients like other chicken curry.it has very unique flavor as well as delicious and healthy too.Do try this easy to prepare kadahi chicken. Enjoy and Have Fun!!!!
Ingredients:
  • chicken pieces clean &washed(with or without bone)-1and 1/2 lb
  • Onion-1 big (sliced)
  • Tomatoes-2big (chopped)
  • Tomato puree-1/2cup
  • Green pepper(capsicum)
  • Ginger garlic Paste-2tbsp
  • coriander seed-2tbsp
  • whole red dry chilli-2
  • Methi(fenugreek seed0-1/4tsp
  • Amchoor powder-1/4tsp
  • Garam masala-1/4tsp
  • Turmeric powder-1/2tsp
  • Salt to taste-
  • Oil-2tbsp
  • Half &Half-1cup
  • Ginger Julianne- fro garnishing
  • Coriander leaves- for garnishing
Preparation:
First dry roast coriander seed,methi  and whole red Chilli till nice aroma comes.
Once they cool grind to coarse.
Heat oil in a kadahi or pan add onions sauté till it gets little brown.
Add ginger garlic paste till raw smell goes away.
Add tomatoes and salt sauté till tomatoes gets soft.
Add in grounded masala and mix it properly.
Add chicken and other masala turmeric,red chili, garam masala and amchoo,
Mix it well. Cover and cook for 10- 15 minutes. Stir occasionally.
Add sliced green pepper. Cook for 2 to 3 minutes.
Add half and half let it boil. Turn off the heat.
Garnish with chopped coriander leaves and Julianne ginger.
Enjoy with rice or biryani!!!

Nimona with Cauliflower(peas curry)

This recipe is originally from UP (Uttar Pradesh). It usually cooked with fresh green peas can be made with frozen peas,And other spices coriander, cumin etc. Makes curry more dectable.. It tastes great with hot rice.
Ingredients:
  •  Peas -1 cup( fresh peas or you can use frozen peas)
  •  Cauliflower-1 and 1/2 cup (cut into florets)
  •  Green chilies-2
  •  Coriander leaves-½ cup (finely chopped)
  •  Turmeric powder-1/2tsp
  •  Coriander powder-1tsp
  •  Whole coriander seed-2 tsp
  •  Cumin seed-1tsp
  •  Methi seed-½ tsp
  •  Chickpea flour (besan) 2 tbsp-
  •  Pinch of hing
  •  Oil-2tbsp
preparation:
Coarsely grind the peas in a grinder without water keep aside.
Make a paste of coriander leaves, coriander seed, 2 green chilies with little water.
Make a smooth batter of besan, consistency should be like dosa make sure no lumps.
Heat oil in a pan put methi seed, red chilli, 1 green chilli, hing let it splutter now add ground
Peas paste after 1 minute add cauliflower fry this on low heat for 4 to 5 minute.
Make sure the paste doesn’t stick in the pan splash some water in between keep stiring.
Now add turmeric powder and salt then add besan batter with some water.
Once it starts boiling simmer on low flame for 6 to 7 minute.
Then add coriander, cumin, and green Chilli paste and give it a boil it will be ready in 4 to 5 minutes.
The aroma and taste is so amazing.
Enjoy with rice and chapatti!!!

Cabbage Capsicum Rice

This is very tasty and flavorful rice recipe. It takes very less time to prepare and tastes too good.Healthy one pot meal relished with any raita or curd.



Ingredients:
  • Cooked Rice-2cup
  • Capsicum-1cup( all colors cut it into lengthwise)
  • Cabbage-1cup(finely chopped)
  • Ginger garlic paste-1tbsp
  • Cumin Seed-1/4tsp
  • Black Pepper-6-7
  • Green chilli-2(finely chopped)
  • coriander leaves- for garnishing
  • Oil-1tbsp
  • salt to taste
Preparation:

Heat oil in pan add cumin and black pepper sauté for few seconds.

Add green Chilli and ginger garlic paste cook till raw smell goes.

Add chopped cabbage and capsicum sauté for 4 to 5 minutes.Don't over cook.

Add salt and cook for another 1 minute.

Now add cooked rice mix properly. Turn off the heat.

Garnish with coriander leaves.

Enjoy your healthy rice with curd or raita.

 Note:You can also add onions for more flavor.

Cantaloupe(muskmelon) Milkshake

Cantaloupe milkshake are good for helping you full as they are packed with fiber and water. this is one of my favorite and easy drinks to make .
Ingredients:
  • Cantaloupe-1 cup peeled and cubed
  • Sugar-2 tbsp
  • Milk-1/2 cup
Preparation:
Add milk , cantaloupe and sugar into a blender.
blend well until smooth and creamy.
pour into glasses and enjoy.
